Tonight I made a 20% rye batard to go with broccoli cheese soup for dinner. It was in its proofing basket early enough that I decided to start a 20% pumpernickel with baker’s black cocoa, molasses, and caraway. That one is currently bulk fermenting until it goes into cold retard later. Anyway, my batard came out great. Best crumb so far. Appears to be perfect. My old Chef Baking Instructor would give you top marks for that.

That's good looking batard. I had no doubt that Cramps could do this. If he can make such fine pipes, he can make a fine loaf of bread.
What he needs to to next, is put it on the lathe and carve it into a pipe. THEN I'd be impressed.

So, I was rushing last night, and only let the bread rest for an hour before dinner. I like the crust really chewy, and an hour rest isn’t long enough for it to develop that chew. This morning I made toast with it, and an it was much better. I think at least a 2+ hour rest is essential for the crust to further develop.

Very nice! I love home made bread, but have never tried to make it myself. The desire is there, the time is not.
Did you make a "butter board" to go along with it? 🤣😉
I'm not a fan of hard crust unless I have a bowl of soup to go along with it.

It looks great. I bake bread often. If I make a cheesy soup (or a bisque or chowdah), I make bread bowls and fill 'em up.

Some killer looking loaves there, Jason! I have only done yeast/ white breads, we have the large kitchen aid mixer that sits under a dustcover never getting used, I need to change that.
