Smoked, crispy pork ribs and potato salad. Beer on the side. "a typical Central Texas barbecue menu looks like this: meats sold by the pound, starting with the holy trinity of brisket, sausage, and ribs, smoked with post oak. There might also be turkey or chicken. Pickles, onions, and white bread, if you like. Sides include potato salad, beans, coleslaw, maybe macaroni and cheese or some kind of casserole. Dessert is banana pudding or fruit cobbler. You might drink iced tea, you might drink beer, you might drink sodas like Big Red or Dr. Pepper." Central Texas style Barbecue is superior in my opinion compared to East/ West/ southern style Texas BBQ...but that is just my opinion.

Okay... another solo dinner while my wife's in the hospital. I've been trying to keep it simple, but I can't eat junk. Hmmmm... there's some defrosted boneless pork strips in the fridge, so I'll cut them up, brown them, add a splash of chicken stock, sprinkle on some granulated garlic, spread on BBQ sauce, cover, and cook. Peas on the side for a veggie. Yum! Sounds like a good plan. It turned out okay. I always have Meals on Wheels as a backup, lol.

Last night, my wife and I had watched a British documentary about a project to recreate and build an Edwardian era Dish and Chips Shop at a 300 acre living history museum in Yorkshire. We were both craving fish and chips as a result of watching the show. So, for a late lunch today we went to the Griffin Pub in Battle Creek where the menu is headlined by fish and chips, bangers and mash, and shepherd's pie.

It turned out okay. I always have Meals on Wheels as a backup, lol. Taos County discontinued Meals-on-Wheels in our area. Seniors now have to drive 46 miles round trip for that low quality little lunch in town. Canned and frozen foods.

Had a large Cobb Salad after golf today at my club. As much as I’m trying to eat healthier I’m jealous reading about delicious bbqs, fish and chips etc. Oh well, time to munch on another yummy celery stick. 🤷♂️🤦♂️🤪

Went to The Black Bear Diner for breakfast, based near Mt. Shasta Ca., used to eat at the one in Gilroy, and glad they planted one here. The meals are huge, they make their sausage in house and it is incredible, the made from scratch corned beef hash is made from slow roasted cb brisket. blackbeardiner.com/menus/?store=37Lunch and dinner is good also.

Schwan 3 #482 toaster pancakes one cycle. Usual adds, nuke to plateful of mess, 2 sausage links to side. K-cup cocoa, to back room desk, eat & to the papers.

Alone tonight, I reheated thin slices of a leftover rib-eye, and sandwiched it on Powerseed bread, toped it with sharp cheese, a fried egg, and two strips of bacon...not strictly Golo friendly, but dern it was good!

Fried up a few Chicken Paillards, breaded and seasoned. Made a nice German style mushroom sauce (for Schnitzels). Can also make Potato Dumplings. Only question is will I have the appetite to eat all this? Questionable.

Doggone it John, you missed your calling. After reading through numerous posts over several years, I conclude that you know your way around the kitchen, informed by a lifetime of divine appointments in restaurants around the globe.

Actually, I cracked it before dinner and added a pinch to the sauce. It's my secret ingredient for adding richness to any dish. It's especially good in chili. I loaded a bowl, in a meer of course, but I had another coughing fit so it's going to have to wait until tomorrow. It's better on the dry side anyway. Thanks again for the gift.
