Yesterday I fixed a recipe for creamed tacos. Velveeta, Rotel, chili beans, onions, hamburger meat and chili powder. Some yankee's idea of Tex-Mex I guess. Anyway, it was pretty tasty and filling. Nothing wrong about that.

Nothing wrong about that. I dunno. It's got quality ingredients and it tastes good, but it just doesn't feel like quality food. It's like something you would fix for a football watch party. If LSU has a successful season, maybe we'll have a get together in Mandeville and I'll fix it again. Fast and easy using prepared ingredients rather then from scratch. Nothing wrong there. I enjoy fussing love my taco filling. Sometimes I am in more of a hurry. SO, putting food factory prepared ingredients is the way. I often make chili con carne with canned beans, my own cooked meat, and a can of Wolf Chili. Rotel is mighty handy as are the adobo chiles.

Chili con Carne in the old Griswald iron kettle. Sliced Chuck steak, Pinto beans, onions, garlic, Chile powder, oregano, cumino, water, tomato paste.
Another pot of leek, onion and celery soup, pureed but chunky.

Picked up some used sirloin strips from the grocer. Got them in the sous vide. Will have them with boiled butter potatoes, a salad and some sautéed squash.

I buy marked down meat for same day cooking or for going right into the freezer. It was 3 bucks off per pound. Nicely marbled. We have too many steaks in the freezer to put any more in there.

El Pollo Loco shrimp tacos for lunch...might do a pot pie later. When I lived in LA we would visit Pollo Loco often. Loved their marinated broiled chicken with black beans and rice. They also had Salsa Bars in each store.

They also had Salsa Bars in each store. It was good we had a coupon, but an eight-piece chicken meal is pushing $30. Going to look into Broasted chicken and the techniques employed by "Mexican Chicken" both give a crispy exterior without the breading, and juicy meat inside....looking for my new Pollo way forward.

That 30 bucks buys a lot of really good sides, in addition to the best tasting chicken I know of. I really miss the one that was 2 miles from our old house, just not the 45 minute round trip get it.

Street tacos and two hard shell tacos with plenty of lime pieces to squeeze. Extra hot sauce with fresh tortilla chips and of course pinto beans. El Pollo Loco has been closed for well over year in my neck of the woods there are five locations left in the greater Houston area. The one by Rons old stomping grounds is long gone as well.

Apple Jacks for breakfast...since I have been buying raw milk, I enjoy cereal so much more, and I like a glass of milk more.
Cornnuts for a snack....Big Lots is going out of business, so the wife bought an 18 count tray pack for $4.00. Hesitant to eat them, visions of losing a crown, but these are still within the expiration date (not by much) and softer than what I remember but still have the same great taste...not sure if aging is a factor, but maybe cellaring Cornnuts is in my future?
