KFC Extra Crispy Fried chicken sandwich
From the breast portions, slice thinly, mayo/ red onions/ lettuce and a bit of Dijon on quality bread. (sliced Jalapeno's on mine)
Been making these for years before Popeyes and KFC started making them.

Couple of years ago, one of our country stores stocked Swanson Classic Dinners. This included the fried chicken which was bone in. The quality was very good and better than I recalled from years ago. Have not seen them since.

Have not seen them since. We used to eat those all the time and they were good. Had to be unhealthy. We called them iguana dinners because the pieces were unidentifiable as chicken parts.

The usual breakfast of an egg, Black Pudding, pork sausage, and potato patty with toast. About the only improvement is steak and eggs. Lunch was a bowl of homemade minestrone soup. Dinner will be more of the curry lamb shank with lentils and barley. Although I am eyeing a Michael Angelo frozen lasagna package in the freezer. The curry will just get better as it sits.

Still on the ribs, employing the "Texas Crutch" Aluminum foil was highlighted because Butcher paper works better, the meat does not "stew" in foil...tried both ways, paper is superior.

Right now there's a baking dish of brownies in the oven that are for tomorrow's Holiday dinner but, of course, a couple of pieces will need to be checked for quality control. I'll have the brownies with my ice cream while watching the Guardians vs Oakland A's game recorded from last night.

Sauced ribs...combination of Baby Rays BBQ sauce/ Big John's Texas BBQ sauce, and red Chile molido from Potrero Trading Post in Chimayo NM.... Killer chile, but a little goes a long way. Really nice, Sweet from Baby Ray, the others add heat...they do not cancel each other out, but they complement each other. And the stand on it's own unsauced...

I saw the Michael Angelo frozen lasagna is vegetarian. So, I pan grilled a beef patty. Placed the lasagna on top and the "Lasagna Burger" is born! Good it was. Veal would have been better but not available.

Veal would have been better but not available. They have a veggie and a meat lasagna. I can barely tell the difference. I like the eggplant lasagna. Also moussaka.

Mary Kitchen Corned Beef Hash, half can, to which diced zucchini, asparagus, onion was added. Topped with two poached eggs.
