I always carry a medium stockman . I started out with Old Timers and moved my way up to Case and Bokers . My fish filet knife is a old Case ,My skinning knife is a early Buck both have served me well for over 40 years . In the kitchen is a full set of Chicago Cutlery that have been used for over 20 years . I keep em sharp ,last year while in Arkansas I finally got me a Black stone .

charl: Sorry, been out for a couple of days. For kitchen knives, I think getting the advice of a chef like you are would be the best solution. I would spend as much as I could afford. I wouldn't go for average in a kitchen knife, but something expensive. You'll never regret it.
