Beef is mighty important and is its own food group. I would not leave it to Hardee's. Get some Ground Round or Ground Sirloin and make your own burger or Salisbury Steak. Tosh....I agree. Tonightโs burger I paid extra for Black Angus. A couple of days ago I had Salisbury steak, which I need too also eat more of for sure!! During the week I intend to make myself a good steak.....all I need is half an appetite ๐ I understand the loss of appetite. Hope you can manage to take in more. Cook it up and try a few bites.

I'm in Mexico at the moment, and half the time I'm not fully sure WHAT I'm eating. But it sure has all been good. This morning I walked down to the little market and got 6 eggs that still had feathere on 'em, and a small loaf of fresh-baked bread that was still warm from the oven. Scrambled the eggs, ate them with the bread, and washing it all down right now with a cup of heavily sweetened Nescafe instant coffee.

Contemplating making Scottish Oatcakes today. Reading some recipes from the UK, it seems that three "sizes" of oats are called for. Presoaked groats, cut groats like Pinhead and Rolled. Should be interesting. Never made them before.
Anyone else enjoy them? I do not recall if we have any Scots amongest our congregation?

Ulster Scots is probably as close as you'll get. I've never tried making them though.

Ulster Scots is probably as close as you'll get. I've never tried making them though. My family left Scotland around 1500, and left Ulster in 1695, so none of the family recipes have survived. And I am very OK with that. ๐ค Edit 300 years of living in the American South has created much tastier things to eat than oatmeal. You have to be hard pressed to be that creative with oats. I've been reading about all those recipes for different puddings made with oats and offal, and I honestly would rather eat worms.

Along with Barley. Corn (Maize) is a good southern crop since it requires much water, sunshine and not too much cold. Grits being an excellent cereal food. Corn liquor and Bourbon and excellent drink. There are many things which can be done with oats, both sweet and savory. I enjoy oats and prefer them to barley as they have a lower glycemic content. Lots of fiber and taste great. They are easy to grow here. I get much enjoyment from Scottish culture and would live there in a moment if I could afford to. My time in the Highlands and islands was well spent.

Just had some shake and bake chicken strips with chicken noodles and green beans. Had leftover brownies for dessert. I have a great Mrs. that keeps me fed with good food.

My wife made some salmon with some sort of honey glaze for dinner. It was very nice. That sounds great. I love salmon and need to bring some home. Of course, my "fishing" these days is limited to the freezer case at the market.
