Last week it was chilly and I made grilled cheese sandwiches (Francisco Sourdough with colby-jack) and Cambells tomato soup...my granddaughter who hates tomatoes trusted me that she would like it. She spent the night with me last night...grandma is out of town, and we played old maid, I watched all of her shows, then read a book until we crashed out. This morning bacon and pancakes, met her mom for a day out and she asked if we could have grilled cheese and tomato soup..it is her new favorite, and she asked to help pack my pipe..it was too loose, but easily rectified and was a great smoke...building memories for me, if it clicks with her it is icing on the cake.

The meatballs referred to previously came out fantastic. Served with a lower carb rigatoni made from chickpea flour. The taste is quite interesting but the texture is not the same as durum wheat pasta. I could learn to like. The Banza brand.
Meatballs were lamb and range fed finely ground beef with diced onion, lots of garlic, Italian parsley, two eggs for two pound of meat, Italian bread crumbs, oregano, basil, rosemary, salt, pepper and one cup of shredded mozzarella. Packed tight in a n iron skillet. Roasted at high heat. Then drenched with Marinara Sauce and cooked for another 15 minutes. Sprinkled with freshly grated Parmesan.
A good meatball is a wonderful thing.

Bacon and eggs. New side this morning. Wife got a mini waffel maker as a White Elephant Gift. Poppy seed mini waffel! The little bags of muffin mix work great. French pressed hazelnut coffee on the side.

French pressed hazelnut coffee on the side. That is a cool idea. My Ex used to love morning waffles, even the Eggo frozen toaster variety. She would have loved a mini-waffle maker for scratch prep.

If you ever find a low carb pasta that taste half as good as real pasta please post. I haven't found one yet. Your meatballs sound supreme! Only thing I do different as far as cooking is brown them all over in olive oil/fresh garlic in a big skillet on the stove-top and then finish them off in the sauce.

The last of the prime rib stacked high with melted Monterey Jack on butter toasted hamburger buns. I could of had tomato soup and grilled cheese but I don't have cool soup cups like Charlie. My mother used to make me chicken noodle, being polite I finally told her I hated chicken noodle, I was probably 25.

It is hard to beat a prime rib sandwich....Prime rib, horseradish mayonnaise, on a crusty bun with grilled onions really lights my afterburners...thanks a lot Sean, now I am going to search for a nice rib roast for New Years day!
For the purposes of full disclosure, I am happy that the grandcritter likes grilled cheese and tomato soup more than she likes prime rib...much easier on the wallet.

They go in an iron pan with olive oil and then into a hot oven. Come out great. I only have one "burner" so the oven gets used a lot. If you want a lower carb pasta check out the Banza Garbanzo bean flour pastas. They have a good flavor and the texture is close. With more careful monitoring in the boiling pot, they might be about the same.

I told you that child abandonment would come back to haunt you Ron...don't say I didn't tell you. I didn't! She said that he wasn't mine! And I have kept a roof over my son's head for 31.5 years. It isn't fair.

Went to the Culver's in Porter today and had a pot roast sandwich. Really good with just mustard. Only ate half the fries. Diet, you know.

greets all. Soon as done here, Schwan's #662 toaster waffled (2). Same additions, one cycle then all nuked to plateful of mess. Add store brand k-cup cocoa & to smoking room desk & continue with the papers. (I find if reading while eating...won't eat so fast). Good breakfasts all at least in Eastern Time
