My Uncle Joe makes the best caponata hands down. My sister in law Vanessa makes the best bbq chicken in the world. She won’t give me the recipe because she swears that if she does, I’ll stop visiting.

Sorry, I should have been more clear. I was referring to pasta sauce... or as the crazy Jersey population calls it, "Gravy". Where I'm from, it's just sauce... gravy goes on meat and potatoes, not pasta. I wondered about that NJ Gravy nomenclature. Used to hear it when I lived in NYC from the Jersey contingent. I used to make it a few times each year. Now that I do not eat pasta there is not much point. :-( For us gravy was the Sunday sauce cooked all day with the meats (meatballs, sausage and pork) simmered in it. Sauce was a quicker marinara sauce for pizzas, quick pasta dishes, etc.

Moms deep fried chicken tacos hold dear to my heart, whenever she would make them childhood friends would show up from all over the neighborhood. Weezer would make about 36 of these deep fried golden nuggets of delight and us kids would become fat a ticks consuming them. Its probably been about 5 years since I had a chicken taco, I think I'll give her a call!

My Mom was an excellent chef in the kitchen. She was also known too make the best potato salad, macaroni salad and coleslaw. During the holidays my Mom would be in the kitchen for what seemed around the clock the day before a special dinner. I still remember two of my Mom’s close Italian friends that would say to her “ your Jewish, how can your Italian sauces taste better then ours “! My Mom and I were extremely close, I think of her often and ALL the good times growing up and throughout my entire adult life. Rest In Peace Mom, your now in a better place.

My mom was 8 yrs old, her dad put a milk crate next to a wood stove, her Mom was ill, my Mom cooked for 15 brothers that were in the cane fields, her natural gravy was a thing to behold, browning the meat to a dark dark brown, pieces of meat sticking to pan, talking meat out adding a little water and stirring , cooking it down again, then adding water again. The gravy was so good you could drink it.,my wife watched her as Mom could not read and write, her father did not believe in schools, but she could cook, you couldn't cheat her on money, she would drive 600 miles to Brownsville Texas to meet my Dad when he first started Shrimping in that area. Oh my wife is now the gravy maker we have to watch my Daughter in law as she hogs the gravy for our holiday meals. HaHa

My mother made the best Beef Stew ever. I have the Griswold Iron pot she used which she got from her mother. Never the same when I make it.

I think a meal made by someone else always tastes better than when you make it yourself. My mom made all sorts of good stuff when I was growing up, some of which I can't replicate, some of which I actually make better. I took after her and learned to cook for myself. I'm now the cook for my own family, so I cook dinner every night. I just asked my daughter for her favorite thing I make. Without hesitation, she said, "chicken tortilla soup, and cauliflower soup".
My mom makes a mean chicken fricasee with biscuits. She'll always be the better baker. Her birthday cakes are to die for. ESPECIALLY her white coconut cake. I could put myself in a diabetic coma with that stuff.

But my grandmother used to make Schi, a Russian cabbage soup with beef, sour cream on top....now I make it (just as good). The only thing I haven't made is the selaudichi...pickled herring in a mustard sauce. That is up very soon.

The only thing I haven't made is the selaudichi...pickled herring in a mustard sauce. That is up very soon. My Great Grandparents were from Russia & Austria, so I know good pickled herring. I grew up eating herring in a vinegar, sour cream and fresh dill and mustard sauce, marinated with sweet onions for at least 24 hours before enjoying. I made it last....New Years of 2011.

My Mother would take every last penny she had to cook a meal so she could share with everyone close to Her, Everything she cooked was good, I'm not saying that because she was my mother, but because it was true, and anyone that shared a meal with her, would agree on the above.

I had mentioned that I was going to make selaudichi (sp) not sure of the spelling as it is Russian. Made it today...it is wonderful. For those interested in the recipe: Selaudichi 2 12oz. bottles of Herring in sour cream with onions 12 oz. yellow mustard 2 "heads" of fresh dill 4 oz. virgin olive oil (approx. amt) 1 "head" shallots 3 fresh green onions (8 to 9 stalks of green) 1.5 tspns sugar
Blend mustard, olive oil and sugar, cut green onions in 1/4" pieces, mince shallot, blend all together. Wash sour cream off the herring and cut into 1/4" pieces. Blend all together and let marinate for 24-48 hrs. Put in refrigerator when done.
Eat selaudichi on ritz or similar crackers or dark pumpernickel bread.

Lonecoyote and antb and AJ give that selaudichi recipe a try...takes about 20 minutes of your time and tastes wonderful. My wife even loves it.
