All Quiet On the Western Front deserves a mention and while perhaps not top tier, I have always found The Guns of Navarone, consistently entertaining.

Lots of GREAT movies here.
I'd add "Blackhawk Down." While not a declared war, certainly plenty of war involved.
An extra nod to "Lawrence of Arabia." One of the all time best movies ever, regardless of genre.

Truthful documentaries which depict the real circumstances through the eyes of those who were there.

All of the above, and more... to include:
Not so much a war movie as it was of a military trial; perhaps two wars at once...
Sergeant Rutledge (1960)

As they don't make decent war movies in this genre anymore, I found the French TV series: A French Village a delight. 7 Seasons with a great cast depicting life under Nazi occupation. It is continually evolving through the war years and is very involving and top notch binge worthy. I saw it on the MHZ network via subscription on Prime.
