I’m assuming (dangerous I know), the idea behind your question is not what you do in the past (cellar more of a certain blend that’s no longer available as example), but if you had nothing and had to start building your pipes and baccy with what’s available today. Based on that assumption. I would be sad because all my McCelland cellared baccy (14lbs of various blends) would be gone as well as my Dunhill Flake and Baki 320 shape Meer which are almost never made. So those items couldn’t be replaced (at least at the prices I paid). However there are still great baccys to cellar so I’d be ok in the baccy department overall. I would however approach my pipe replenishment different. I would target custom makers and higher end (hand made, hand cut) production pipes. I went through a learning curve when I started with low/mid grade pipes. All smoked ok and they provided me with which styles and or shapes I prefer. So as far as pipes, yes I would do things different.

I would do it all over again, but making different mistakes. ie, if I bought too much of a tobacco I didn't like I wouldn't buy it again, but it would just open up space for me to make another error
