Hi Guys, This is a carrot cake recipe I cobbled together about a decade ago. And since that time, nearly every single member of my extended family has requested this cake for their birthday. When they come to visit, we ask them if they would like us to make anything special, and they're like, "Oh!... Can you make a carrot cake?!" I have made literally dozens and dozens of these cakes, and this recipe has never, ever failed me. Seriously, give it a try, and you'll be hooked, too. Cheers, Robert ---------------------------------------------------- Carrot Cake
Ingredients2 cups flour (white, whole wheat or a combination) 2 cups light brown sugar; packed 2 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. nutmeg 1/4 tsp. cloves 1 tsp. salt 1/2 cup oil 1/2 cup milk 6 eggs 3 cups grated carrots; lightly packed 3 tsp. vanilla 1 cup chopped pecans or walnuts ProcessPreheat oven to 300F degrees. Combine flour, brown sugar, baking soda, cinnamon, nutmeg, cloves, and salt in a bowl. Stir well, then blend in milk, oil and vanilla. Add eggs one at a time, beating mixture after each addition. Stir in carrots and nuts. Pour batter into two greased 9-inch cake pans. Bake at 300F degrees 40 minutes or less, until a knife inserted in the center comes out clean. Let cool on countertop and then ice. Brown Sugar and Cream Cheese Frosting
Ingredients16 oz. cream cheese (2 packages) 1 stick (1/2 cup) butter or margarine 1 cup light brown sugar; packed 1 tsp. vanilla 1/2 cup chopped pecans or walnuts to sprinkle on top (optional) ProcessLet cream cheese and butter stand in bowl for an hour or so to soften. Cream together with mixer or by hand. Gradually beat in brown sugar and vanilla.

Great looking cake. Bet it eats better than it looks. Those Pecans sprinkled on the top, sold me.
Guys like you are the cause for making me buy larger belts! Not nice.....

Thanks, Legend Lover. Yeah, I just realized I need to do a metric version of this recipe. We've been spending more time in Mexico these days, and my wife's family are all in Mexico, so having a metric version of my recipes actually makes a lot of sense. Thanks, briarpipenyc. You might think you'd get fat with a cake like this, but it's quite the opposite, since you'll be lucky to get a single piece before it's gone.

Thanks for posting, I have a sweet tooth, so I enjoy a good carrot cake. Especially with a REAL cream cheese icing!! I just copied and pasted your recipe in my Pages app and printed, itโs a recipe I will try in the near future ๐. I donโt eat carrot cake with raisins.....itโs a long story....but Iโll cut it short....Dunkin Donuts does not use raisins in their jelly donuts. My Mom was eating a jelly donut years ago and said...โ since when does Dunkin Donuts put raisins in their jelly donuts โ? So I took a look and said...โ Ma, thatโs no raisin, thatโs a roach, donโt you see the legs...and you just ate half of it โ! From that day on my Mom and I never ate any baked goods with raisins ๐๐๐

What do you call a fly with no wings and no legs? A raisin.
I made a cake with a similar topping but with candied walnuts (or pecans). Amazing.

Robert Perkins Hello Robert, and thanks for sharing this delicious recipe with us. Other than German Chocolate cake, Carrot cake has to be my favorite. We'll have to fire this one up soon

Mark ^^^^^^^^ I never had another Dunkin Donut since! Even though that can happen with any baked goods purchased at a bakery or supermarkets, I never noticed any bugs....did I ever eat one in a baked good....most likely. EXTRA PROTEIN ๐๐

I almost forgot, if this cake isn't for a party and it doesn't have to be "round" or whatever, you can definitely make it in a 3-ish quart (9-ish inch x 15-ish inch) casserole tray like this one. Pour the batter, bake it, let it cool, ice it, and serve rectangular pieces with a spatula. When we're making cakes just for ourselves, that's the way that we do it, anyway.

I always thought you had to use a cake tin. Round, layered cakes are always nice, and they're definitely the "classic" cake. But with everybody so busy in this day and age, rectangular cakes get the job done with minimal fuss.
