I thought this would be a good thread to start , I like many of you enjoy cooking, an felt it would be nice to provide pictures and maybe some recipes on what your hometown or state is locally known for ..
I am from Connecticut originally and they are well know for two things , Pepe's Pizza Pepes pizza best pizza I believe in US
and Louis Lunch First Hamburger - first hamburger in USA
In Tampa where I live know , being Cuban we are known for Cigars and Cuban Sandwiches , I will have a big write up for you at Christmas Time because we roast a whole pig. But I will provide some delicious pictures of some great Cuban Sandwiches.
That sandwich pic flung a craving on me and I should be in bed. Luckily I am full of great food I've been eating all day and I can probably get to sleep in spite of you. 🤠

Houston regional food, if we have one, is a cross between Cajon, Mexican, and barbecue. Going to spend a few days in New Orleans with my nephew and his wife next month. I intend to gain 5 lbs. Red Snapper Pontchartrain, oyster po'boys, gumbo of all kinds, crawfish etouffee, Mississippi Mud pie, Bananas Foster, fresh beignets and Community Coffee with chicory. You know, like that.

Restaurants: August | Besh Steak | Borgne | La Provence | Pizza Domenica | Lüke | Johnny Sánchez New Orleans | The Caribbean Room | The Bayou Bar | Hot Tin | The Silver Whistle Cafe | Willa Jean
Besh was one of those chefs that stayed in New Orleans and turned the place around. He’s now my favorite chef from the area. My other two favorite Cajun chefs are no longer with us....may they Rest In Peace.

My Grandmaw used to make the beignets for me, never liked em, hard, greasy, only thing good was the powered sugar, but I loved my Grandmaw and ate them with relish. Chickory coffe is Chicken shite coffee. Me I’m a Crispy Creme guy, sorry but that’s the way I ride.!

Of course she came to Texas in 1886. Her only memories of New Orleans was that when she was sent to the bakery for bread, she used it for a stick horse going home. My nephews fiance has lived in New Orleans all her life, so I believe that we are covered.

\ Mojito is Cuban, is it not? High priced Mexican joints are counter-intuitive. I go to places where the people are- La Gente. Otherwise, it is strictly for tourists. I order in Spanish and I expect results!!!!!!! I recall high-end Mexican restaurants which catered to the elite. Wear a coat and tie and behave appropriately. There is light bowing, handshaking and a lot of "Usted" in the dialogue with the proprietor along with as much Castillian pronunciation as I can manage. Old world formality. That class of Mexicans was influenced by Spanish, German and Czech immigrants. After some finger snapping and sharp orders from the owner, everything is much improved. I do not see that much anymore as much of that generation has passed over. The Mojito is Cuban, this Mexican restaurant had Mexican, Spanish and Cuban employees.....that told me I was definitely not going to get authentic Mexican cuisine. Nobody, not even the bartender knew what a Mojito was, once I told him...I’ll show you and make it...where’s your fresh mint. He responded “ we don’t have any “! I should have left at that point!! PS The best authentic Mexican food here in NC was from a food truck parked outside a local micro-brewery in Clayton NC on a Sunday afternoon. Absolutely marvelous Mexican food...so good I gave the guy a great tip. He sent me a special platter 👍👍👍That has been my experience here in NM, California and even Old Mexico. Some of the best food is found in unassuming places like food trucks. I am frequently surprised and disappointed by bartenders these days. Your experience was similar to my search for a Ramos Fizz as part of Sunday Brunch at high-end hotels which claim to have a nice brunch. Taos is famous for people not knowing much about their job. I guess it is part of the long isolation up here in the north. There were two couples and we ordered a round of the Fizz. Bartender never heard of it so she sent over a large water glass filled to the brim with straight Gin and some lime slices. Another, even fancier hotel bar, claimed no knowledge of this cocktail. So, I went over to the bar and asked to see her manual of mixology. I looked it up and showed her. "We don't have that stuff" meaning lemons, cream and eggs. I responded that the hotel does have a kitchen serving food and perhaps she could ask them? Anyway, the Ramos Fizz is a great Brunch cocktail but not in the Town of Toad, eh, Taos.

Cafe du Monde markets their beignet mix in boxes for home preperation. I keep one on hand make my own. Similar to a NM Sopapilla.
I would love a trip to Louisiana again before my ticket expires. A last round of great eating.
This time I might stay up-state and enjoy the country. Many great memories of meals in NO.

This time I might stay up-state and enjoy the country. Many great memories of meals in NO. North Louisiana is beautiful in a different way than the south. It's more like Arkansas than any other place I have been. Very nice people and very laid-back. I miss the New Mexico cuisine that we had 40 years ago. We have eaten at a lot of places since then that were supposed to specialize in it, but they fail in a big way. It's mostly similar to Central Mexico food but over spiced. Even our friends that have lived there for years can't find the "old food". In Texas the food is Tex-Mex, and different from Mexico and New Mexico foods. The food in Mexico City is sort of a Native American base, with a strong Spanish influence and a heavy overlay of French sophistication. Best I have ever had.

toshtego, have you ever eaten at Rancho de Chimayo? In 79 the food was out of this world, but they closed and reopened since then. They still have great reviews. It's the only restaurant that I have eaten at that was featured in National Geographic. Next trip we are going there for sure. They used to have a cigar girl that came around with top quality cigars. I doubt that is still the case. But it was the first time I ever enjoyed a quality cigar.

Back in the 80's, the food trucks in Vernon Ca. (Central L.A.) had pretty magnificent Steak Picado burrito's...competition ruled the day and kept all the food trucks at the top of their game. One of the trucks I ate ate at, a guy with a knife threatened the old gal in the food truck, she threw jalapeno brine in his face and kicked him in the junk...I think the old gal may have invented pepper spray.

Back in the late 60’s and 70’s you could purchase a kit and make your own Gyrojet......you were lucky if the weapon didn’t blow up in your face. Actually more dangerous then my Lorcin.380!!

I’ve fired 2,500 plus rounds with no issues....maybe a few flyers using cheap ammo. Perfect piece to leave out on the range to keep those who know the history of a Lorcin far away from me.....works every time!! What’s funny, I’m always approached by someone that wants to buy it. It’s my responsibility to make sure it gets into nobody else’s hands!!!
