Anyway, like I was sayin', turkey is the fruit of the land. You can barbecue it, boil it, broil it, bake it, saute it. Dey's uh, turkey-kabobs, turkey creole, turkey gumbo. Pan fried, deep fried, stir-fried. There's pineapple turkey, lemon turkey, coconut turkey, pepper turkey, turkey soup, turkey stew, turkey salad, turkey and potatoes, turkey burger, turkey sandwich. That- that's about it.

That- that's about it. I used to make Red Chili Turkey Tamales with the leftovers. Turkey Tetrazzini! Turkey Pie. BTW, driving to town the other day, there was a flock of wild turkeys next to the road. Nice to see them. Should have been our national bird.

I agree, Turkeys are not as photogenic as an Eagle. Eagles have been on national flags in Europe for a long time- Prussia, Russia, Poland, etc. The Turkey is our own indigenous bird which may be why Ben Franklin recommended it.

Yesterday's Turkey: Dry brined and smoked with hickory and pecan on the Weber. I do a couple of turkeys on the Weber every year and it is my Thanksgiving tradition. This one was tender and juicy. It may have been my best yet.

It may have been my best yet.  A neighbor used to always smoke a small turkey on a Webber and roast one in the oven. Having eaten there several times, the smoked bird is always gone before the roasted one. Yeah, good to the last wing tip! Yours looks stupendimente!

Turkey was fantastic, worth the effort for sure! Mine too.... all that is left is the carcass. It will be simmered down with vegetables, strained and make some turkey noodle soup. Sounds great!
