Tonight was wing night...…..wifey had Thai sweet chili wings and I had sweet habanero wings.Her sauce store bought and delicious,mine homemade mostly from last years garden.Next batch of sweet habanero will have more pineapple and mango...…..the batch from last year was right at the top of my heat tolerance level.I love sweet and hot but this stuff put me in sweats.Wifey got concerned a couple times during dinner...…...delicious but too hot even for me.First time I've said that in the last 20 years or so.
OK tell me how you like your wings...…..nest thread is a hot sauce thread.

Use to enjoy my wings hot and spicy with a homemade blue cheese dipping sauce on the side. Also at times Asian crispy👌👍👍. Since 2011 chicken has been out of my diet.

I use a mix of melted butter, Frank's RedHot Xtra Hot Cayenne Pepper Sauce and Apple Cider Vinegar.
The wings must be first fried and then coated with the sauce followed by a generous sprinkling of Red Peppers.
Served with Celery & Carrot sticks and Blue Cheese Dressing.

You are on the right track.
It took me years before i figured out that really spicy Hatch chiles, mixed with the sweet really offset the overly spicy/ overly sweet flavor. They really compliment each other and provide a gastronomic delight.

When I was a kid and times were hard, wings are what chicken we aften got because it was considered the cheapest dregs, all bone and no meat. Dad could sometimes afford it. Now it's the rage in cuisine. My son-in-law and I had this discussion just yesterday. He loves wings. When I buy chicken, I'll be hanged if I'll buy the wings when there are are 2 perfectly good, fat beasts available. However, I'm glad folks like 'em, saves more real chicken for me. I suspect it's more the principle of the thing any more for me, but I still stubbornly refuse to buy them.

In the 80's working at a wholesale meat distributor, chicken wings were pretty much looked upon as trash compared to Ribeye, Fillet mignon, seafood of any sort, even bacon....then the Buffalo wing Rage took effect.
I love me some wings, but some restaurants are a little too proud of their prices, and they are easy to make at home.

I have held Wingathons for decades.
Mine recipe is equal parts flour, masa harina and curry powder. Then baked at 400 degrees. Sprinkle salt and enjoy.

I had a co-worker from Buffalo that had worked at the Anchor Bar. We all thought he was the world's worst a$$hole until he cooked wings for a party. We cut him more slack after that. Best ever. I hate pay the price for wings at a restaurant, but when I think about the PITA deep fryer smoking up the house with grease and the cleaning up after, it's not a bad deal. The worst thing is that I can eat 30 wings no problem and they're 80 calories each.

I was over in USA to give training to a group of people in our American headquarters. Haven't had a dry rub since.

I’m remembering how parents sacrifice, late late in life I found out my Dad loved white meat but would pass on it for me as a teenager you don’t really appreciate this. Kind of makes me sad.

Dude... You should have titled this thread " All Wings Considered"! I like mine well done and crunchy around the ends. Baked wings are an abomination. Never had one that wasn't like eating an earlobe.
Any sauce can be good. You can actually buy most of the sauces from Quaker Steak N Lube online(It's a local joint that makes top notch wings.) I only eat wings once or twice a year, but I like using the sauce on other things. Nothing beats a turkey sandwich with lettuce, tomato, avocado, and Arizona ranch!

For me at times I still enjoy smoked turkey wings, they have a bit more meat once fighting past the ligaments. They are best deep fried after they are smoked slightly👌👍👍. Since no more chicken for me turkey wings will do.

All this talk about wings, I'm going to have to fire the fryer up and make some. I steer toward more flavor in the sauce than pure hot when I was younger. When I make them at home I use Franks Red Hot and butter. I also use garlic and butter and dry ranch dressing sprinkled on after a butter dip.

I prefer traditional Buffalo wings, i.e., crispy and swimming in Frank's Red Hot and butter. The blue cheese/ranch dressing is for the carrots and celery only, IMHO.

Hard to beat Franks Hot sauce.. the real deal. I used to pick up trailerloads of Franks hot sauce in 55 gal drums from Benckaiser? The parent company... they had loading down to a science... I would get a red light at the scales.... after a complete stop and the liquid stopped moving, the scalemaster.... (scale whale)... would look like victory denied at writing a ticket.... green light, carry on. Who the hell buys 55 gallon drums of Franks?

I like all sorts of wings, everything from Hooters wings to the originals in Buffalo, to the wings at Quaker Steak and Lube! But I need mine done the way I like them - no breading, well done, with Franks Red Hot sauce at a minimum - preferably hotter. To me, there is nothing worse than biting into a wing that has not been cooked enough and ending up with a mouthful of gross chicken fat. I like the skin crispy and the fat entirely rendered into the wing.
I prefer blue cheese over ranch, celery on the side, and I dip EVERYTHING in the blue cheese!

My dry coated baked wings come out crispy on the outside and moist inside. I use a convection oven as hot as I can get it.
