Twice baked potato casserole: many cheese varieties, sour cream, butter, Spanish Chorizo shaved and finely diced, parsley.
Probably Spinach will accompany. Not sure if any meat will be included.

I dont know. Im down visiting the kids in Idaho, and my oldest daughter is a great cook that like to make authentic, unusual dishes. She said tonight's supper is a light one, an authentic Mexican dip made with corn, heavy cream and other assorted ingredients, with home fried chicken strips.
I dont know what its called, but Im sure it will be great. I'll try to get a name from her.

Bucatini with feta spinach sausage and for kinds of cheese in a tomato based gravy. Pasta overload and just enough for two. So no leftovers.

Snacks and road food all day. Last thing we ate was a barbecue sausage sandwich from Dickies in Nacogdoches. Lots of trucks on the way back. Looked like a convoy.

Finally made it in after the Noon rush. Excellent cheeseburger with all the trimmings and nicely cooked fries. A large cup of pork green Chile gravy on the side to smother the fires and dip the burger in. Excellent meal and gratefully consumed.

Ended up in Snook Tejas and stopped for lunch we had sirloins and sides. But we had to try chicken fried bacon that came with a side of white gravy. I mean the most unhealthy thing in the world deep fried with breading how could I possibly pass up the chance to try it.

Trader Joe’s had a new tv 📺 dinner. Shrimp tikka massala. I usually get the chicken but I like shrimp so I figured I’d try it. So far I like it.

Tonight, two super-lean elk burgers on toasted English muffins with slices of sweet onion and bread-and-butter pickles. Some prosaic potato chips and a glass of red wine. Simple but does the job.

Moose is also quite good. Bison also. My freezer is chock-a-block with game meat. Including impala and Alaskan salmon. Muley and whitetail almost don’t count.

I can never eat a banana after drinking coffee … just a weird chemistry for me, I guess. This morning I had a Sidewinder Skillet Bowl from BonFire in the Maverick Station.
