I can never eat a banana after drinking coffee … just a weird chemistry for me, I guess. This morning I had a Sidewinder Skillet Bowl from BonFire in the Maverick Station. I actually ate the banana first.

Just a frozed piaza tonight, but.....
I thawed 2 racks of Tyson Baby Back Ribs. Going to prep them tonight - let them set in the refrigerator overnight covered with rub, then smoke them all day tomorrow. Apple chips this time I think.

soon to be usual Sunday brunch. 3 x-lg eggs (store special, doz was .99, couldn't pass up)3 seem about same as 4 lg), mangled ham slices, cubed x-sharp chedder on "griddle" part of Geo Foreman grill, all to two platefuls of mess. De-caf Keurig k-cup, me same with cocoa. No mid-afternoon snacks

Smoking 2 racks of baby back ribs today. I use an electric smoker made by Masterbuilt. It has 4 shelves that are about 12" x 12", so I cut the racks in two. Using apple wood chips today. I usually use hickory. The ribs were in the refrigerator for >12 hours covered with rub, wrapped in plastic wrap, sealed in a Tupperware container. Here are a couple sections ready to smoke.

Today is my daughter, Shelby's, 22nd birthday. They're making a big enchilada dinner and homemade cinnamon rolls to celebrate.
My diet has completely tanked for the month of October. 😆
We have 4 family birthdays this month, and a big dinner is always part of every one.

Thinking about heating up the meatballs in tomato gravy I made Friday. Serve on steamed Mexican Squash rather than spaghetti.

Well, the ribs turned out great. Moist and tender. My wife said "they were great - if you liked smoked ribs". (She has a long list of foods she doesn't like - lemon pepper, dill, dry red wine, chicken livers, .....) 6 to 6 1/2 hours to make. Gone in 30 to 45 minutes - except for almost 1 full rack leftover. 2 racks of baby back ribs ready to "rest". Ribs cut apart. Many fell apart trying to cut them. Mashed potatoes, garlic bread, and a nice bottle of red wine from Spain. OMG!

My goodness but those ribs look spectacular!
Tonight I had a thick elk steak smothered in an impromptu “sauce” of halved white grapes, coconut, and walnuts quick skillet-fried in a light coat of olive oil. Plus toasted buttered tortillas and mashed potatoes washed down with some red wine.

Tejas style BBQ that means if can walk or fly they kill it and smoke it for several hours. Backed up by copious amounts sweets. Had a lot of fun with friends laughing and eating.

shortly to be my top fav Schwan breakfast. #481 3 toaster pancakes, one cycle. Usual adds, add k-cup cocoa & to smoking room & continue with the papers. Last Fri at grocery store, found helluva deal on Jimmy Dean breakfast bowls. 4 for $9 ( musta been older stock). Bought 8 of 'em. Luv my Schwan products but deal too good to pass up. Lucky that plenty of room was left in back room freezer.

Two chickens unhatched over easy with what the local bakery calls English toast bread along with marmalade. Paddington Bear is English so it seemed fitting.
