Fried chicken, mashed potatoes, gravy, corn, cottage cheese, corn bread. You are killing me!!!!!!!!!!!!! Has there ever been a time when Fried Chicken, mashed potatoes and gravy, corn, corn bread were not welcome? Perhaps while perched on the edge of a Black Hole Event Horizon when gravity crushes the life out of one. Nuclear attack? Other than that, I cannot think of such a moment. atleast I wouldn’t die hungry. |

Canned tuna and canned crab in Bechamel with scallions, garlic, sherry, butter, Spanish Paprika, ground pepper. On whole wheat Angel hair pasta. I forgot the peas!
Easy and so goooood!

Our big family holiday is over, and everyone will be gone by the end of this week. Christmas, as Ive indicated elsewhere on the forum, is not a big affair for us. So its time to go ahead and put a stop to holiday weight gain and drop the few pounds Ive already picked up.
I aint kidding...in my line of work, 20 extra winter lbs is hell in the spring when it comes time to start riding colts again. Ive picked up 5 in the last 4 weeks, and Im not picking up any more.
No breakfast this morning, just 2 cups of coffee. No lunch, Im gonna be out on the road.
Supper? Well, we'll just have to see what transpires 😁

Breakfast was a BLT. Problem,, Only one slice of bread. Tough enough I had to use Cherry Tomatoes with Whipped Cream Cheese to hold them in place. What about a top slice??? Solution: a gilled whole wheat tortilla. Bread on bottom, tortilla on top. That, is what living in New Mexico is about.  |

The elk scraps I mentioned earlier. Marinated in my own Mojo Criollo for 24 hours. Some pieces are a bit chewy, they go to the dogs. Some I kind manage with the fw teeth I have left. I wanted them crispy to make them easier to chew.   |

I like the KFC chicken pot pies, but if you can find out when they come out of the oven, that is the best time to get them. Sometimes they sit too long. A great recipe using leftover rotisserie chicken from the store. Unlike the recipe though, I use the pastry topper on the bottom.
