"Animal Style", I hope. When I used to regu;larly drive back to LA from NM, years ago. My first stop was the In-and-Out in Barstow. There was always a line. "Double Double, Animal Style". I have never had the animal style burger, had the animal fries. I did a 4X4 once, ain’t doing that anytime soon. The good news is now you can get In-N-Out before you get to California. I love their food, and the employees are always top notch. Whataburger also puts out great food and service, but I prefer In-N-Out. They are a great outfit. A family owned business. They own and operate all their locations. No franchising. Or, that was the wya they operated for decades. So, they can maintain quality and staff loyalty. They have some well motivated people running their locations and they all do a great job. In the early 1990s they ventured outside of California for the first time. Las Vegas, NV. I think they might be in AZ and TX. Naturally, they avoided New Mexico.

Last night's Pot Roast was a little lean. So, I added sour cream and Pommery Mustard to the pan juices (Red wine and meat drippings). It is kind of Pot Roast Stroganov. Good in cold weather. Add Hungarian Paprika and go Goulash!

Made the cheesy ham and potato casserole last night. This afternoon, heated some of that up and dropped a fried egg on top. This was decadent. That is something worth getting out of bed for.

Bread dough in the oven set to "Proof", 100 degrees (F). I will give it a few hours. Out of store bread here.
Half whole wheat, half unbleached Bread Flour. Both King Arthur. Avocado oil, Buttermilk, demerara sugar, wee salt. Yeast activated with simple syrup and warm water.
Now, to pan or not to pan, that is the question. Whether it is nobler and tastier to enjoy a baguette or Biga or suffer the little slices of pan loaf.....

I've mentioned here that my German neighbor now and then brings us food.,This evening she brought Sauerkraut,Ham,and Mashed Potatoes...Her husband is a good friend.He still works so I take her to the doctor quite often.I guess the food is a return favor.

Ham and swiss melt on a buttered grilled hard roll. The ham was sauteed in butter, Worcestershire sauce, and fig/acacia/honey jelly.

Bread baking, Corn Muffins baking. Green Beans steaming. Mayacoba Beans and Hammocks in the pressure cooker. Kitchen warm as it should be. Wild Turkey 101 in the glass, a plash of water.

The beans and ham came out great. I cooked the hocks long time first. Then added the beans to the liquid and meat with bay leaf and seasoning. The bread came out great. The muffins are from a mix and a little sweeter than I would like but still tasty.
I am so grateful to have this abundance.
