Not having a steady hand and eyesight is not that great either, I found that when I take it to a professional (knife sharpener) that I get back some great results. That is a skilled trade. I have had good results doing that, too.

I have had good results doing that, too. Mostly, I sharpen mu own because I have the time. I am not as skilled as some but I can get an edge on most knives. I have a 1960s vintage Case sheath knife that is nickel-plated steel I can get a good edge on. Most of my other knives are carbon. I have a few stainless steel kitchen knives that defy sharpening by any means other than a grinder.

Diamond hones work really well on that super hard steel but i prefer conventional stones for milder steels. Sharpening knives by hand is a long and boring process and with my ageing eyes I have to check my work with a magnifying glass for a uniform edge. Now days they have all these pull through sharpeners that can damage a blade rather quickly so I stick with my slow and tedious old ways.

The new knives got here today perfectly balanced a true work of craftsmanship. So to celebrate I am making ground beef tacos so i can just stare at them for another day before I put them to work.

The Buck 119 that I dug out of the box has been sharpened, but for now it is simply a piece of art for me to stare at.

Worked on my old Buck 102 more. Nice polished edge. Still not sharp enough.

That is a beautiful Buck, you are fortunate that having it sit all them years in a sheath, the blade did not suffer...it may be a testament to the quality of that blade, I would bet on it.

From what I understand the quality of the steel back then is better than most of what is coming out on their low end knives these days...why, I haven't a clue...but it was perfect coming out of the sheath.

Most el cheapo knives use a el cheapo china stainless steel and are hit and miss for being brittle.

The new Wusthof chef got a workout today making fajitas and will probably be the last kitchen knives I have to purchase. Not really a big knife person except for a Case or Spyderco every now and then.

Not really a big knife person except for a Case or Spyderco every now and then. I cooked professionally and found the kitchen knives for me are "Mesermeister" from Germany. I love their alloy, it is a stainless carbon which is slow to corrode and can be sharpened by humans using tools. They are thicker and heavier than many kitchen knives.

While in Miami, I found the box that my brother and I had put together when he came back from Nam. In 1966, I had given him an 8" Randall Model 2 fighting stiletto and a 6" Buck 119...the Randall I had dug out and gifted to a collector on another forum (BoB) as I have no relatives who would want it and I didn't want it sold in a garage sale for $10.00. The Buck 119 he didn't take with him and has sat in the box for the past 54 years unused but without the box and papers. The Buck at that time had Buck stamped in the blade with no other markings and 4 maroon micarta spacers...a full tang blade with full flap leather sheath with Buck stamped on the front and on the "button" that keeps the flap closed. Just checked the value on the intertubes and used they are ranging in prices from $500.00 to $900.00 depending on condition. This one has never been out of the sheath except when I took it to be sharpened, as when it came from the factory it had an edge but nothing to sneeze for. This one I won't give away as I did with the Randall (I must have been out of my mind that day or feeling really depressed) but the collector made me a couple of Damascus kitchen knives. A 8" French chef and a 4" paring both with tiger striped maple handles (scales). Thought you hunters and collectors might want to see this beauty. Things of beauty! And thanks to your brother for protecting our freedom!

Reading the reviews on Amazon about Wustoff and Henckels knives is funny. Rust spots coming out of the dishwasher. How many things are wrong with that one short sentence?

The wood block showed up for the new knives total cost 165 for the set probably saved a hundred dollars using fleabay vs other outlets. Takes up very little space a good thing as the fifth wheel on has 9ft of useable counter space. Nice! We moved all our knives to magnetic wall racks and we have 23 Sq ft of counter space which still isn't enough.

Be sure to have your knives firmly held at least two points of contact...I've had knives get bumped off and fall on the floor next to wife's leg...could be dangerous if it accidentally strikes someone.
