A buddy of mine, a lifelong Louisianan gave me advice on making Roux. It looks like you passed the test, grasshopper. For the gumbo, I took it pretty dark, but not as dark as I did with the chef watching over me during the class this summer. He liked my roux and told the other 'students', "look at this, be like Monty". He was a character. It was a great time. Of course, all the wine you could drink during class was good too. The soup only required a light roux, so I took it to a peanut butter color.

Pulled out the recipes we used this summer at the New Orleans Cooking School and made Shrimp and Andouille Gumbo, and Shrimp and Artichoke Soup. Started breaking in my roux spoon Looks first rate! I know that stirrer and had one years ago. I wondered what happened to it!!!!!

A grilled cheese... 8 thin slices of mesquite-smoked turkey breast, interlaced with smoked caraway cheese (local), and Colman's, on English toasting bread (Walmart bakery and quite good). With chips and sweet tea. Lately been making GCs on a skillet with a bacon press. But today dug out the ol' George Foreman grill. Dang. That grill reminded me that it makes the best GCs, hands down. The new favorite method. I agree. George's Grill makes some nice sandwiches, burgers, fish filets.

That wagyu beef looks absolutely perfect...just the right amount of marbling. Bet it is great in the mouth too. Please let us know the name of the brand that your friend is selling his beef under.

I am trying to find out if it is going to be available to ship, they are based in Reno, or if and where local distributors might be.

If I can without going absolutely raving mad. I’m dropping weight. I’m eating a lot of lean protein and a lot of greens. Cutting out alcohol, limited caffeine and very low sodium has been doing the trick. Drinking almost a gallon of water a day keeps the belly full too.

I had a El Monteray Applewood smoked bacon burrito, 300 calories and coffee,80 calories. I may skip lunch and have a small portion of spaghetti for dinner. It would be better if my wife hadn't made a double batch of brownies.

I try to do that, but as you know, an extra 200 empty calories is hard to make up for after you get hungry. Last night I filled up on broiled zucchini and sliced tomatoes, but we don't always have those options.
