A visit to San Luis Colorado and "Mrs. Rios Thai Kitchen".
Massaman Curry with shrimp and pork. Number 4 hot. So good. But it appears I will have to move on to another dish. After eating this for a couple of years, it is time.

A stir fry of roast turkey in Korean Curry Sauce with tofu, bok choy, scallions, garlic, ginger, brown rice and aduki beans. Sesame oil and tamari sauce and a little Piri Piri for heat.

A breakfast stir fried rice with brown rice, tofu, eggs, scallions, ginger, garlic, baby bok choy, sesame oil and tamari sauce.
I enjoy this style of cooking for now. The back bacon, bangers, beans, black pudd are out for the foreseeable future.

It just does not exist here. I am glad you are able to enjoy it. I have memories of Prime Rib places from long ago.

I typically only eat one meal per day when on the road though… I hit the boss hard on that one meal.

I am sure you are way better at offloading all that than the young man I saw in Taos over the summer driving for Sysco. Three crates of vegies on a hand truck going down a ramp from the truck and he lost control, tripped on the rail and dumped jalapeños, bell peppers and tomatoes all over the parking lot. Traffic was blocked until it could be cleaned up. One meal a day makes sense. I did that long ago.
