Fixin' to put some pork chops and Salmon fillets on the smoker. Smoked over pecan, the Salmon is tasty but as a Yute', I got spoiled with the same day catch and smoke in earlier times. ..

That was on my list for today , but I ended up making a beef and brown rice dish, of diced carrots, onion, celery ,beef stock and rib meat from the prime rib...when it was almost done I added a cup of dry brown rice and a while later I finish it with a golden mushroom & cream sauce. It was a first timer , but something I will do again, as there were smiles all around the table, and crock-pot or not ,it came out a rich and very warming meal. A back-note on my Saturday night prime rib... a few weeks ago, my wife was invited to her baby sister's house for prime rib...all the sisters {5} went ,and all were looking forward to a good meal. The report I got was that the prime rib roast for 8 people was cooked in a crock-pot , and served on paper plates ! I was told , in hushed tones by my older sister-in-laws, that my oven-roasted , Christmas meal would blow baby sister's meal out of sight! After a light pat on the back, I promised to fix one , after the memory of the paper plate meal was long past.

I am not sure I would cook a Rib Roast in one.

Would love to have one of those...place in Miami that I go to the few times I have been back..a pizza place that I frequented when I lived there (back in the 80's) called Casolas...made the best pizza in all of Miami and their burgers and meatball subs...I almost would go back there just for that alone. Was gonna eat the last of the filet...been saving it for a sandwich until I saw the pup looking at me with those eyes...she got it and I was able to enjoy the look on her face when she was eating "my" steak sandwich.

Smoked salmon in a salad with a vinaigrette dressing, crusty bread on the side.
Some Pouilly-Fuissé wine from the 80’s
Funny story about that wine acquisition.
