An 11:00 Am breakfast of two eggs, excellent chorizo, hash brown patty and my own pinto beans cooked in the crockpot with a ham shank and roasted whole green chilies. Ought to hold me until supper.

Lunch was a hamburger from the Dirty B's food truck. The menu includes a Dirty Sanchez. I didn't try that.

after snoozie, Schwan #404 one piece breaded chicken bake, #755 1-cup bulk corn nuke, to 6pm CBS local/national newsfeed. Jeopardy later, store brand tea & cookies for company. Maybe baseball after, Yanks/BlueJays long as stay awake. Usualy around 11pm Eastern, to the chats

On weekends I progress to real ones not in burrito form Whisking eggs with a spoonful of mayonnaise added really gives a nice fluffy texture to the eggs when scrambled, if that is how you make your egg-burro’s. For 4-6 eggs I use the big size dining spoon heaping.

Never tried that. I heard soda seltzer does the same. Have not tried that, either.

A green chile cheddar cheese two egg omelet. I use two nice big fat green roasted chilies from the can. Slice them open, sauté in olive oil, then poor over the scrambled eggs, add the grated cheese. Mostly off the burner in an iron skillet so it cooks slowly. Shake the skillet, of course. Then fold. Green Chile on top looks purty when nestled into the egg.
Such a great combination! Simple!

We had a bunch of leftover baked russets from yesterday, so I made twice baked potato skins chock full of the good stuff for the first time.
Pretty easy, and they are far better than any I have ever had in a restaurant.

Dropped the wife off at the airport to go to her high School reunion, so I decided to stop at Black Bear diner. I ordered the corned beef hash, eggs and toast. The corned beef was a pile of shredded corned beef, potatoes on the side. $22.00 with the tip, I do not see the value, I would have rather had canned corned beef hash, I don't care for regular corned beef.

After many years of eating the canned corned beef, I tried some from Katzs Deli. I'm sure it was fine and closer to homemade, but it wasn't for me. We had a Black Bear diner by the old house and we never found anything that we liked to eat there. It was always crowded though.
