Rigatoni with shrimp and asparagus, Italian Parsely added in at the end, simmered shallots and garlic in oil, added chicken broth, shrimp at the end. A nice pasta dish, lighter than doing it with the heavy Alfredo sauce, fresh grated Parmesan as a light topping.
Garlic Sourdough, and Caesar salad.

Wife calls it goulash, sometimes calls it chili-mac. Left over chili on macaroni.

Meat Balls in the oven. Ground beef, ground pork, ground veal, panko, egg, lots of green Chile chopped, lots of green bell pepper chopped lots of fine diced local garlic, fine sliced Arugula since no parsley, Panko crumbs as I had nothing else. Fresh ground black pepper, real English Worcester Sauce, Smoked paprika from Spain, Old Bay Seasoning.
Might cook some Garbanzo flour pasta and tomato sauce from a jar. That is only a starting point.....
The deciding factor is whether the stove top burners will heat or not. Sometime they do, often they do not. That change the meal vector!

Beef/ pork/veal is suppose to be the cats meow on making meatloaf, I have never done it that way yet. I am betting that you will fare sumptuously on that recipe, John. You need to move to Shiprock/ Farmington/ or Cortez so I can drop in on you. (Well, Mancos valley by Cortez might work, the others not so much) You sound like a hell of a cook, and I am always looking to up my game.

Bad sinus headaches all day so just a beef pot pie tonight. Allergies ramped up here also, this is the worst time of the year in Az. everything that has grown, starts drying and drifting. Excedrin is the only thing that kills my allergy triggered headaches, make sure you only use Excedrin PM at night if you go that route though.

Friday usual. After nap, to diner, home with fish fry, sides of cottage cheese & applesauce. Eat at TV, 6pm CBS local/national newsfeeds. Later, store brand tea & cookies for company of Jeopardy. Might even do a cigar after & follow the pro rassling, silly as it is, the script!

Two Hot Green Chiles sauteed in clarified butter. Scrambled eggs and grated cheddar added. A very good omelet. Although, one chile should be sufficient henceforth.
For the past several days i hAve been covered head to foot in itching rashes. since last evening, an ocean of cameline lotion. This morning started histamine tablet, Hyrdroxyzine 25 mg.
Some experience. Goes great with the neuropathic pins and itching in the feets and legs.
Must hvae gotten into some kind of weeds plant with allergic properties.
