Since about 1959, Farmer John Pork processing in Los Angeles has been supplying the west with top notch bacon, hams, sausage, pork loins etc... I started making pickups at the facility in the early 80's, and the vice president of the company I worked for based in the bay area must have sent a heads up to Bernie Clougherty, the president and son of the founder. On my maiden voyage, I bumped the dock and the Teamsters operating the dock started giving me a hard time, basically telling me that they would get to me when they would get to me. Unbeknownst to me, Bernie Clougherty was a college roommate of the VP I worked for. He came up, put his arm around me and said How is my buddy Skip doing? and gave me a tour of the facility. The Teamsters stood on the dock with their mouths open, when I came back one guys said, "you know Mr. Clougherty?" By this time, I knew how the game was played.... "yeah, my uncle Skip is Vice President of the company I work for and through the family, uncle Bernie is my godfather". Hell, I wasn't even Catholic, much less a godchild, but word spread fast, after that I had royal treatment when I bumped the dock....not only that, but I never bought pork while in the meat business..."Uncle Bernie" comp'ed me on whatever I wanted. At that time, they processed 10,000 head of hogs on a busy day, and at Christmastime had 5 million pounds of hams in the warehouse headed to hotels, restaurants, and grocers. Smithfield is a Chinese company that owns most of the pork production in the United States. If I can find a brand that they don't own I buy it, but sometimes it's all you can get.

From a friend that is a butcher on my a Facebook page… “ I cut meat for a couple years for Safeway. If you knew how many pork "primals" we had to throw out because they had huge pus pockets in them, you'd Never buy a Smithfield product, ever!”

Didn't California outlaw bacon anyway? Although I am concerned about the conditions most of our food animals are raised in.

Accept lockdowns (unless you are in the political class… Newsome, Pelosi) Scream about pork, beef, and chicken consumption, while you enjoy smoking weed unabated and unwilling to criticize political leaders on alcohol. I'm glad I can get meats from a few small family run farms near us. Specific cuts are dependent upon when they harvest the animals, but they always have something good.
