Thanks, that was a great video, not so much in quality but in content. It was surprising how young everyone is in that restaurant, it sounds like they all got out of school, worked at some of the best bbq joints and refined it.
Watching all of the prep and work helps you understand why good barbecue costs as much as it does.
I wonder how they hold a brisket from the smoker on Thursday to the plate on Sunday.
I am guessing that Oak is the wood mostly used?

I am guessing that Oak is the wood mostly used? Probably mostly scrub oak with whatever pecan and a little mesquite. Those beef ribs will make you crazy. You can wrap a brisket in foil and heat it in the oven, but I think that they smoke on Saturday night unless I missed something.

Them beef ribs are beyond description, I have never seen that much meat on a beef rib. For the meat processor, it is more profitable to trim close to the bone… that looks like a custom cut for them, or that is the way the game is played in Texas.
I wish I could get my hands on summa dem ribs!

I wish I could get my hands on summa dem ribs! I haven't been to this place, but I had some beef ribs in Taylor Texas that were the best thing I ever ate. Lots of meat,served on butcher paper. Sauce is available on request but they will look at you funny.

I lived near San Antonio in the mid ‘70’s (Schertz, Cibolo), but with 6 kids, we rarely ate out, our “barbecues” was grilled burgers and hot dogs. I never had the real deal until in the foodservice industry I met Don Elkins, a Texan that opened a great restaurant. He was a perfectionist, whatever didn’t meet his standards (when an employee missed the mark), it was given away.
