Le Chef de Cuisine informs me tonight's dinner will be Porterhouse Steak with a Portobello mushroom and red wine reduction sauce. Baked Idaho Russet Potato with sour cream and mixed up Oriental vegetables from a frozen bag. He hopes to set them on the straight.

Had a smoked chicken sandwich with my own tzatziki and some tomatoes on a toasted roll. Jr had black lentil soup, the puppy had her chicken, veggies and rice. Fire is started, going to get chilly here in the Northeast overnight

Came out as planned. A decent steak from Good Chop on line. Thinner than I would like but good quality.
Desert was very runny Fromage D'Affinois with hoibs on stale toast. The perfect accompaniment. The wine was a Portuguese Senhora do RosΓ‘rio Old Vine Field Blend 2020.

Went to Joeβs farm grill a few miles from the hacienda. When Joe grew-up here on the family farm, there was only 5,000 people here. He started and owns many businesses, and he has the Midas touchβ¦ he must be very wealthy, but the most down to earth person you could ever meet.
The majority of the vegetables served are grown on the property, and the beef is all local.
$15 voucher on your birthday.
Jumbo prawns, asian slaw, beet salad, onion rings, garlic fries, breaded zucchini, iced tea.
Plenty of leftovers.

I get the greek yogurt, put it in a coffee filter inside a strainer and let it sit for 24 hours. It comes out like a softer cream cheese consistency wise. I then add roasted or regular garlic, shredded cucumber that I put in a paper towel to squeeze the liquid out, lemon (sometimes I grill the lemon for additional flavor), and dill. Comes out pretty good Ill also do a garlic / tahini / yogurt sauce for shawarma using the same yogurt

I use a cheese cloth. Rid the extra water for a thicker yogurt.
