Stopped in at Lou’s diner (est. 1969), having a stacked country combo. 2 biscuits with 2 sausage patties, 2 eggs over medium, covered in sausage gravy. Hash browns and iced tea. Good looking older waitresses with old school charm. Just to add, I usually get a seat at the counter… this restaurant is a beehive of employees that cover each other's customers needs. No food sits under the warming lamp, and a beverage is replaced before it is needed. I ask the patients in a 5 mile radius about Lou’s… always get a smile and positive comment. Today I was told “You have to order the patty melt, not only is it huge, it is so friggin good” I wish there was one in every town.

Blood tests show increasing anemia. So, more meat is indicated. MD ordered an Iron Panel. In the meantime its ,ore meat and leafy greens for me. Looking for Geritol! It is time. I wonder if they still put liquor in it. If not I will add my own . Breakfast was two eggs, two link sausages, two rashers of back bacon, a few hash browns and a biscuit. Followed by Chemo pills which have already impacted me. Typing this was a struggle. Coordination impaired. Heading back to bed... Red meat and leafy greens, John -- get it! Hope the ill effects of the daily dose have worn off by now.

Breakfast of two eggs, one sausage patty, hash brown potato patty and a cauliflower patty. A large dollop of Dennison's Chili con Carne with the eggs. I aim to add ground beef, onions, garlic, and red chile to the remainder of the #10 can. While it is good on its own, better when I am through adding my touches. Now, please understand that beans in Chile is not the way in New Mexico. Chile is made with meat and that alone. Beans are served on the side with the Chile, sometimes with Posole, too. The mixing of beans and Chile seems to come from the other 49 US States. I suspect our neighbor to the east but even they often observe this tradition. Added together works just fine with me. Please do not mention this to my neighbors. I love Dennison's chili. Always been my favorite. Sometimes I'll mix a can of bean and no bean together so it's not quite so beany. Otherwise I have to take double doses of bean. It only kinda works. You'll have to send me your recipe of additions to the chili.

IHOP is OK. Along with Denny's about the only corporate franchise joints I will patronize these days. We found a place in Texarkana that has great breakfasts and good sounding lunch. Most expensive thing on the menu is $6.95.

More smoked bison, cuts… That looks great; I’m curious how you smoke these to keep from drying out. We don’t have access to bison around here but my guess is it can be leaner than beef cuts. In any event it’s good to see you’re having fun and getting good results on your smoker.

Thanks, Dan. I didn’t smoke these, my cuz did. You are right that bison (and deer) are MUCH leaner and denser than beef. (There are TWO filling meals on that plate.) The “secret” to keeping them moist over hours of smoking is the water pan between the charcoal and the meat.

The “secret” to keeping them moist over hours of smoking is the water pan between the charcoal and the meat. Interesting, I mainly smoke pork with enough fat to not need the water pan. It makes sense though for lean cuts. The last time I did a brisket I sous vide it for around 30 hours and then smoked for a couple, which really helped with moisture. Of course, that’s controversial for smoking purists I look forward to more smoking pictures, thanks again for sharing.

I used to eat at a place in Cypress-Fairbanks, northwest of Houston, that had great bison burgers. I've had them at a couple of other places, but they were too dry to eat. Had to put ketchup on them!! The Cy-fair place might have cut theirs with beef, but I'm not sure. They also had ostrich and emu burgers. I liked the emu, the ostrich not so much. When we were kids, my best friend's uncle used to send them bison roasts. His mom tried everything to make them edible.

I spent day before yesterday climbing up and down the ladder and stretching the shade cover. I was sore yesterday, but when it came time to get up off the toilet this morning, it really caught up with me. I had to roll off on the floor and crawl to the sink and pull myself up.

A two egg cheese omelet with two link sausages. I burned up the hash browns in the air fryer. Ixnay on that for the future. HBs belong in a skillet where they can be watched.
