I have a large rectangular iron pan with a tight lid. Two hours covered, 45 minutes exposed to carmelize. With a spice rub and Dave's Sauce is a good sauce.

Made another White Lilly Cornbread. No sweeteners on hand and I like just a hint of sweetness to accent the taste. So, I crushed a ripe mango into it. Ought to be "interesting". Batter tasted good.
Tonight will be a small battered pork chop, the only one I have, sigh! Sweet potatoes and some form of plant matter to be decided.

[/quote] It is not sweet cornbread. The mango adds a touch of sweet enough to register with the sweet receptors in the tongue. To get real taste all the receptors need to fire. I doubt you would even notice it. Part of the reason is the White Lilly cornbread mix is very salty and so to make it more palatable, the sugar receptors need stimulation. That is probably more than anyone cares about but I spent some time dealing with food science problems years ago. You can call it SWEET Cornbread if you want to. I will have to look for Steen's Cane Syrup. I make my own simple syrup from Demerara Sugar. I have some in the fridge but forgot about it.

Strong stuff, halfway to molasses and it has a iron tonic taste to me.
