Lunch was a burrito in town smothered in Red Chile. At least that is what I asked for. The Red Chile tasted like tomato soup with chili powder sprinkled. The filling was 95 per cent rice. Nary a bean to be found. A few small pieces of what might have been pork but could also have been something else. Odd because this place is usually very good. You're just not having a great day, are you. Some days are like so. Every place has it's misses. I have eaten at the joint for 25 years and this is the second miss. That is a good record.

The Fryway 59 that's been open here about a year has had 60% misses.
We're getting a new restaurant in the same place as the last 2. Looks like they are going to call it Fire and Knives. Top chef out of Dallas that was born and raised here. Food looks wonderful but he's only doing 20 pickup orders a day right now.

I do not have the numbers as foodservice distribution is far back in my rearview…
The number of restaurants that fail within the first few years is really high. If they make it to five years it is practically a miracle.
Over the years I saw many people that dreamed of opening a restaurant, followed that dream and lost 100’s of thousands of dollars. And the dream turns into a nightmare.
When I lived in Hollister Ca. I saw six restaurants in six years in the same building. It was in what seemed a great location, but it was like the place was marked for restaurant death.
A fellow I worked with, him and his wife put in all the chips for a Quiznos franchise, house was put up for collateral. They bought minimum paying jobs for themselves while losing their home.
I love to cook, and many in the family told me “you should open a restaurant”… no way, no how.

The amount of work was extreme. The place was always packed but she didn't really make much money from it. She was even sleeping with Dave, but she had enough and got out. The building was originally a steakhouse and hers was probably the 4th different restaurant to occupy the space. All the good restaurants in Houston in the 70s that were always busy were closed by the 90s. several were family places that the kids didn't want to continue because they went to college, financed by the restaurant. The Cass County Country Cooking Cafe was always packed, but mismanagement and the difficulties in hiring help doomed them. People drove a hundred miles to eat there. In the next town over, there's a steakhouse that attracts people from as far as Dallas and a seafood restaurant that's almost as popular. Both of them have been around for a couple of decades. I hate to see any restaurant go under. Every small business is somebody's dream.
