Spaghetti leftover with Ragu ala Bolognaise. A thick slice of leftover Sirloin from last night. I overcooked it in the oven. thought that was the best way for 2 1/2 pound slab. So it is Well Done. Still Ok, if dryer than I would like and tougher to chew. I might cut into cubes and put into the slow cooker to tenderize. Or not.

Cut that overcooked Sirloin into 1 inch dice and into the slow cooker with beef broth, a little of my Ragu Bolognaise, apple cider vinegar, and Smoke Hungarian Paprika. There is a Goulash in there. Give it a few more hours and, and viola voila, Hungarian Goulash. May add sour cream at the end so there are even more fat calories. Sirloin is very lean.
Tonight will likely be my ragu with sliced sauteed zucchini with spaghetti. That is four day old whole wheat pasta. Should be well into Resistant Starch.

For lunch, greatest Patty melt ever at Lou’s Diner in Vegas. For dinner, Heavily stacked Pastrami on Rye, with fries Johnnie Mac’s Henderson Nevada. That is some diet. I guess the onions in the Patty Melt count as a serving of vegetables. Two of my favorite sandwiches. Out here, Pastrami has to be imported from the big cities in the East. Boar's Head is about as good as can be had locally. It is OK but nothing like what they have in NYC or Chicago.

Breakfast of Ful Muddamas made with fava beans, garbanzo beans, diced purple onion, diced tomato, parsley, olive oil, lemon juice. I am out of fresh garlic and Za'tar seasoning. With two hardboiled eggs sliced on top. A popular breakfast from Egypt, Syria, Lebanon, Jordan, AND Israel. One of the few things they agree upon.

I made a delicious and satisfying breakfast. I had a heel of a baguette, a ham and swiss omelette topped with some salsa. A side of kimchi. And finished up with some unsweetened applesauce.
