Tried something new. Fillet Mignon with a port wine reduction sauce - which is the "juice" you can see on the plate. The sauce was interesting. It was a cup of port wine, 1 cup of red wine (I used a Zinfandel) and a cup of beef broth - with shallots, rosemary and butter. It was cooked down until there was less than 1/2 cup of liquid left, then strained. Slightly sweet and very flavorful.

Dinner tonight was grilled chicken, sautéed (in a pan, on the grill) zucchini, eggplant and mushrooms. The zucchini and eggplant were from the garden. Served on a small bed of brown rice.

I add some dried porcini mushrooms and figs to mine and it gives it some great depth of flavor

Sadly, Mrs. Rios Thai Kitchen was closed this evening. So, an additional 20 mile drive to the next town, Ft. Garland, CO. There we ate at "Dell's Diner". A roadside diner with the menu to match. Double Cheeseburger smothered in Chili con Carne with fries. Not great but certainly good and I was thankful they were open.

Into another cycle of Chemo. I eliminated Felodopine from my BP drug mix and that seems to have reduced that sense of collapsing when standing. My Cardiologist added it when I was peaking and now I do not seem to need it. So, that is a big improvement for me.

If you find the wine reduction too sweet add a little red wine vinegar to the mix.

Tzatziki sauce, chopped tomatoes, onions kalmata olives chopped pre-cooked beef fajitas and a drizzle of olive oil folded in a pita. Assemble to your own taste. Tzatziki is just Greek yogurt, chopped cucumbers and dill blended together and let it sit overnight.

Tzatziki sauce, chopped tomatoes, onions kalmata olives chopped pre-cooked beef fajitas and a drizzle of olive oil folded in a pita. Assemble to your own taste. Tzatziki is just Greek yogurt, chopped cucumbers and dill blended together and let it sit overnight. Ill give it a go!

Jäeger Schnitzel made in the traditional way. I used a bone in chop rather than a paillard. Browned in oil and then into the oven since it was a thick chop. Traditional gravy with mushrooms. Boiled potatoes and cabbage. Pilsner on the side.
