Which pipe tobacco and/or cigars are the mildest in which you've encountered? Conversely, which are the strongest?

I am VERY susceptible to tongue bite. I have tried many tobaccos, but the only one that I am able to tolerate is Sutliff’s Z92, Vanilla Creme. It’s my only smoke.

I'm working my way to one favorite pipe tobacco and that's it...not from bite though...nicotine is my enemy.

I’m not sure that I can even speak to the mildest. I avoid mild tobacco, both in flavor strength and especially nicotine. My biggest turnoff to any tobacco is mild nicotine.
However to the strongest:
Gawith Hoggarth products:
Dark Plug Dark Flake, both aromatic and not aromatic Any of the ropes, although strong in nicotine, I would say medium strong in flavor
A number of C&D offerings are up there in flavor strength, but I feel are lower in nicotine than the GH products I mentioned
Mac Baren Rustica, strong nicotine, med-strong flavor

I’m very nicotine adverse. I’d try a Balkan like Balkan Supreme or Proper English with no burley listed. It’s limiting but any burley will wreck my day. From my experience American aromatic cavendish blends are low nicotine but the PG the flavor is topped with turns to hot steam and will burn your tongue but IMO PS aro’s are the best. You could also try Danish aro’s like PS Danish Flake.

I smoke most anything. The mildest to me are the pure Virginias. Any Virginia is just hot air to me.

The mildest cigar I can remember having was a Perdomo with a CT wrapper. It's not made anymore. Mildest pipe tobacco . . . I'll have to think about that one.

Carter Hall and Carter Hall match blends by Sutliff are very mild. Anything aromatic by Sutliff is mild as it gets in nicotine. You’ll want to primarily avoid Cornell & Diehl made tobaccos. (G.L. Pease, Warped,) Most everything by Gawith house has at least a fair-to-middling, moderate nicotine base. Little devils like Gawith Hoggarth Rum Flake will fool you with their sweet and enticing rum and maple sugars scent and flavor but knock you about in nicotine with the use of Indian Air cured dark burley leaf, which is also in their Dark Flake and plug.

I must be fairly nicotine-insensitive. (Grew up with a heavy cig smoker in the house, so maybe that's not surprising.) I've never really noticed a ton of difference in nicotine among blends. Drucquer & Sons First Amendment is the only one I can think of that I really noticed a difference. I had a bad experience with And So To Bed, once, a long time ago, but I think that had to do with not having eaten all day, as much as anything.

I tend to think of Dutch Cavendish blends as quite mild in all respects, but it's been a long time since I smoked any and don't remember which ones, so I'm no help there.

I am actually in the process of getting rid of the Lion's share of my tobaccos. I have found that Captain Black Original is the mildest when it comes to nicotine...even milder than SWR.
When I first started smoking a pipe many years ago... I really enjoyed strong, robust blends. As I've gotten older it just isn't that way anymore. I'd rather smoke CBO than nothing at all.

Ropes and flakes tend to be stronger if you seek mild go 1Q route or one of its 20000 variants by a different name.
