Tonight was some broiled cod with herb butter and a watercress & radish salad with homemade citrus vinaigrette.

sparks ... To make the job really easy, I use a Mandolin Slicer. Set it to super thin and slice 2 cucumbers, 1 onion (red or yellow) and 2 shallots. Chop up a few chives and toss them in as well. In a small saucepan add 1/2 cup water, 3/4 cup Bragg's apple cider vinegar and about 4 tablespoons of Turbinado sugar (more or less to taste) Heat the sauce until all sugar is dissolved ... up to but not beyond a light boil. Pour the warm liquid over your cucumber mix, crack some black pepper in there, stir well and refrigerate overnight.

Mmmmmm ... chocolate covered anything! Shredded Beef Chimichanga topped with guacamole, salsa and shredded lettuce ... beans and rice on the side.

Started to build some crab bisque but got carried away tossing in shrimp, mussels, and a couple cod fillets. It became a frankenstein when I added diced tomatos for color, some garlic, peppers and onions. Way too thick now so clam juice and spicy V8 to the rescue. God help me, I don't know when to quit, but the frankenstein concoction and a case of beer is gone thanks to our guests.

Yeah Charl, I think both are so close as to be indistinguishable except for local flair/seasonings like crawdads (cajun) or saffron (paella) and presentation. Eight grandkids tonight roasting (dropping) hotdogs over a blazing fire hurrying to chow down so they can make smores.
