How many of you bake your own bread? Knead by hand or use a machine? What is your favorite flour? Do you use dry or fresh yeast? How long do you ferment the dough? Is there a particular shape you favor? What is the "fanciest" formula you made? Me. I bake my own because is to far to travel to a store which sells a decent product. Hand knead, about ten minutes. Ferment for four hours or so. King Arthur bread Flour. Although, plain old Gold Medal Bread Flour is good, too. "Mountain Mama" from southern Colorado is another favorite. About half in a bread pan for sandwich loaf and boulard or baguette the rest of the time. Rich dough with eggs, milk and butter, kind of like Challah is about as exotic as I get. Here is a plain old loaf, just flour, water, salt, a little brown sugar, dry yeast and some olive oil. Water sprayed in hot oven while baking.

Machine here, King Arthur flour, 1lb loaves every other day. Machine is Japanese starts with a K, very good machine. Don't know what yeast the wife uses. The smell when it's baking will drive you nuts,

Used to make bread in a crock pot. Wish I knew then what I do now about baking soda and powder. Did make some fairly good sourdough. It has been tacked to our roof for twenty years and has not leaked

I used to bake bread, preferred to do it all by hand like grandma.....simple white bread, but it was great. I try to eat bread sparingly now to keep my midsection from looking like I am carrying a spare...If I was to make homemade bread, I would be eating it all.

I will ask my wife for her recipes. She makes a really nice rustic round loaf and some great crusty rolls. She uses a machine to mix the dough, her hands can't take the pressure any more.

I absolutely love fresh baked bread. All kinds of bread!
But alas, I've not been able to enjoy a single morsel since July 02, my birthday, when I started my Paleo Diet.
Ok, ok, admittedly it is a "modified" paleo diet, meaning that although I've eliminated virually all carbs from my regimen, I do splurge a little on the weekends, drinking a couple of beers and Scotch or Bourbon throughout the week.
The bad news is that I haven't had bread, pasta, rice, potato's, ice cream, etc... in 3 months now.
The good news? Well, the good news is that I've been able to drop over 50 lbs. Only about 10 or so to go.

I looked at bread machine and it's a Zog--------, made in Japan, getting old can't remember crap. Just ate 2 big slices of French Bread toast.

Yes I do, wife makes it from scratch, heats black iron skillet with oil in it, spoons mixture in it and that beautiful sizzle, slides it in oven, and man that's good yea, Toner mah sa say Bon ! Las pa la patot ! That's good exclaiminations in Cajun.

I love bread, but don't have the time or patience to make my own.
My cousin started experimenting with making his own, from scratch. He has fared pretty well and is getting damn good at it. Too bad he lives 6 hours away.

Made up a "rich" loaf this afternoon. Eggs, milk, melted butter, turbinado sugar. Should be sweet! Got a little hot on top since it rose so high. I should have divided the dough into two loaves. Oh well, another complaint to file.

It really is not that hard to make one's own. I knew a guy in Berkeley CA who used to grow his own wheat in their backyard. Was he ever fussy!

Living there spoils you, and can really cause you to end up with discriminating taste... wines, seafood, bread, even cheeses are quite phenomenal, and my recent trip to the wine country, all of it was set before me at a few different meals.

Boudin Bakery way out in the Richmond District was my favorite but there were many others. I remember picking up a loaf on the Warf along with a fresh steamed Dungeness Crab.What a meal!
