My lady made a batch of scones yesterday. TO DIE FOR! The whole batch is gone already. I had sent her a couple of recipes as a hint. She came to the kitchen and stirred up a batch, just working like she does... a pinch of this a cup of that. Baked in a large iron skillet in the oven. OMG, delicate 'crust' on the bottom, just slightly sweet, thin crunch on top. OMG...
I will post a 'recipe' if I can get her to write down what she did. I sure hope she can repeat that performance.

I enjoy a scone from time to time and would love to learn her recipe. Hard to find good ones around here. This is Sopapilla country!

Scones
2 cups flour 1/3 cup sugar 1 Tablespoon baking powder 1/2tsp salt 1/2cup cold butter cut into small cubes 1/2 cup whipping cream divided Wax paper preheat oven to 450 degrees
cut butter make pea size into flour with baking powder mixed in Add 3/4 cup and 1 Tablespoon cream Mix gently until moist Dump out mix on wax paper and fold and press into a cake like Lump (I had to add a bit more cream to hold the mix together ) And, I used a rolling pin to roll into desired shape and height Brush with remaining cream Cut into desired shapes Place in a cast iron skillet bake in hot oven for 13 to 15 minutes (looking for golden brown Enjoy

This does not do well for a man trying to get back into shape after surgery. Yes, I know round is a shape... but one I don't prefer.

I haven't had a decent scone since Ireland in '84. We have tried several recipes. We believe that it requires a peat-fired oven to do it right.

The other recipes use milk. Chilling the fat and cutting it in is critical and a skill developed with practice. Not sure if a peat fire is important but it cannot hurt. A liberal application of Paddy's or Jameson may be required for proper lubrication of the cook.

Momma is a good cook. We had some buttermilk in the fridge and she substituted that for yesterday's batch of scones. At least as good...

My wife makes a whole grain wheat scone.Very similar to what my grandmother(Irish) used to make but better.Whole wheat flour and raisins is all I can tell you that's in them.
