Here's mine: Stem Gap
Through observation and experience, it seems to occur at all price levels. From an obviously visual and apparent gap to a gap reveal against a light source, this always bugs me if the stem is not flush. Do you have any examples to add? If so, please post your thoughts.

I have a thing about getting the stem level or aligned straight. Make the pipe set funny while smoking. Something else is the stem becoming stuck in the tennon. I've had to put them into a frost free fridge to dry them out, not wanting to wait a week.

Stem gap is one that irritates me as well. Though having made my fair share of pipes, it can be a real bitch to get perfect.
The other for me is having a stem that is too damn thick at the bite. I know that in some cases depending on style and length of a pipe, it's unavoidable though.

Stem gap is a biggie. I also hate when the tenon/mortise is loose and the stem rotates too easily. As far as performance, nothing makes me wanna toss a pipe in the trash like pipe-gurgle.

I would like to tell you that pipe gurgle is a user issue, but I won't. I will mention that I have some guaranteed gurgle-less pipes for a modest price.

Ditto for me; can't tolerate the stem gap. Out comes the sandpaper and micromesh pads.

For me, after stem gap, is rounded edges at the shank on a restored stem. I hate to see that, and less often rounded edges on the shank end.

My peeve is with pipes that are poorly balanced and are too front/bowl heavy.

Yes, balance is a good point. I hate having to babysit a pipe that will splash liquid into the bowl if not constantly handled upright as one example.

Sounds like you guys need to start smoking cobs. There's nothing on a cob that can't be fixed with a belt sander, bailing wire, MIG welder and some body putty.

I don't really notice stem gap or rounded edges, missalligned stems do bother me. The bite is what can be a dream killer though.If it is to thick or wide.I don't clench,but I prefer a saddle bit and/or a fish tail.For me I've noticed that my pipes don't gurgle after I open the draught hole in the bowl.Also have less problems passing a pipe cleaner or clogging.

Beveled rims. Look great when new, but near impossible to keep from charring the rim after a dozen smokes.
