My wife and I ordered a cheese making kit from Amazon and will be trying our first "wheel" this week. Mozzarella will be first, as it's one of the easiest, followed by Colby and Farmhouse Cheddar. Once we've got it down, we'll move on to some Swiss and Emmantaler. Has anyone else here ever made their own cheese? What were your experiences? If not ... feel free to just chime in with your favorite kinds of cheese and what you like it on.

This sounds like fun. Be very interested to hear your results.
I have made homemade Ricotta with my family before, but that's the extent of it. Actually, I can't really take credit for making it... it was more like I stood there, drank wine and mixed things when told.
I love a good sharp cheddar, but I'm also very very fond of smoked Gouda.

That's awesome. I have wanted to try this for a while now, and I want to learn how to do the wax sealing on the cheese after I make it as well. Just one of those things that always gets put off in favor of other stuff.
I'm a big fan of swiss and havarti, but you can never go wrong with mozzarella, hell, a quarter my diet consists of string cheese.

A friend of mine tried it years ago. By the time he was done he had something the size of a golf ball. Hope your yield is somewhat better.

cheese is something i never tried my hand at making..if it doesnt sound too horrible to make or there are not too many tragedies to go with the process i may try it,

I've never tried to make it,but I love sharp cheddar.Swiss if it's been aged for a good while.

There is a guy from Australia named Gavin Webber who has made some very concise and easy to follow videos. If anyone is interested in learning about this, his tutorials are a great starting place. We are putting out some feelers for a raw milk connection ... lots of cows around here so it should be easy. Until then, we bought the lipase and other enzymes needed when using pasteurized milk. I made mozzarella many moons ago, but moved away from the cows shortly thereafter.
I'm a fool for Double Gloucester.

Raised on a dairy farm we made a lot of cheese, most of it cheddar. Wasn't really thrilled about the packing and pressing but fresh squeaky cheese curd is fantastic.

There is a cheese factory near my Moms house... love to stop in when visiting and pick up some fresh curds. Lot's of people down here in Philly have no friggin clue what a cheese curd is... I feel sorry for them.

Love cheese! Many moons ago when in England working on a farm, we had a Bulgarian guy that made cheese once or twice. Lots of work to it, though.
