There isn't any kind of leaf that "bites" me and I've always deduced that personal body chemistry plays a large role.
If adding Burley or Perique to Virginia cuts this down for you, then reduced sugar content and/or higher pH make a difference to your body.
Both Perique and Cigar leaf are low sugar / higher pH so it makes sense that they don't affect you the same way.

Burley does age. I've mid-1920s Half & Half and it was very savory. It gained some woodiness, but the nuttiess and sweetness diminished a bit. Recently, I smoked a number of 1960s OTCs and the burley had the same effect. Old English Curve from WW2 had the same aspects.
I've smoked generous samples of ERR from every single decade from the 1940s though the last year of production in 2010, and the flavor was very consistent in every instance.
I have smoked SWR made in the 1940s, '50s, '60s, '70s, '80s and '90s as well as several pouches in the 2000s. I was struck by the fact that only in the 1940s version was there a difference in taste. Even then, the difference was only that the '40s sample was just a tad deeper in flavor. I found it amazing how consistent the taste is from World War Two until now.
1950's Half & Half was a little more savory than the 1970s and later versions.

The one tobacco I have an allergy to is red virginia's. If a blend has too much in it I get an acid burn on my tongue as soon as the smoke hits it. It is not like tongue burn from smoking too fast or smoking something too moist. I have avoided red virgina's for years with great success. The last blend that I bought that burned me was Dan Tobacco Treasures of Limerick. It was recommended by someone and I couldn't find out if it had any red's in it so I took a chance on a tin. Damn thing burned my tongue right off the get go. I ended up giving it to the guy who told me I would love it. Maybe he had a plan all along.
Now when I want to try something new I check with jiminks. He tells me if a blend has red's and he has never been wrong. I am currently smoking Salty Dogs and it is delicious and has no reds in it. He recently turned me on to Butera Dark Stoved which is all Lemon Virginia's and it is awesome.

Burley bites me - even stuff like Burley Without Bite. I can handle it when blended in small does, though.
VAs are fine, though - including the dreaded (for some) Mac Barens. Go figure.
