Funny, they had a segment on our local news channel tonight with an instructor from the culinary school at our local community college. She made a pretty tasty looking grilled cheese sandwich. Now it makes sense.

Ah the grilled cheese. So many ways to pull it off. I like a blend of cheddar and mozzarella, with a pinch of italian seasoning on the buttered side of the bread.

I used to like Welsh Rarebit, but now I am a grumpy old bachelor at times and throw a piece of supermarket sliced cheese on two slices of bread, a feast fit for a King, or a knave, but smoked Bavarian sliced cheese is my favourite, at the moment , but talking about food is vulgar a stoic philosopher repeated, he must have had indigestion...

Or try this:
1. Make a white bread cheese sandwich (Mozzarella works well). 2. Pinch the edges and dip in whisked egg and milk (as for french toast). 3. Fry in melted butter until golden brown and the cheese has melted. 4. Enjoy. 5. ..and most importantly; Do NOT mention this to your cardiologist.

Sounds good! Reminds me of when I was in England. Had this friend whose favourite midnight snack (read: after pub snack) was 2 slices of bread with a piece of ham and slice of cheese inbetween. Then you squash that on the table top to get thin enough for the toaster and pop it in. Marvellous stuff!

My favorite grilled cheese sandwich has its origins in 1970's earthy sensitive and wholesome culture. No Wonder bread or any of that 50's crap. Different crap. Orowheat Wheatberry Bread, American cheese (which isn't really cheese) or mild cheddar (which is cheese), green onion or scallions sliced thin, mild horseradish sauce (Kraft - which is crap, but which works well). Spread a thin layer of horseradish sauce on both slices of bread. Sprinkle scallions over the horseradish sauce on one slice and top with a layer of cheese. Place the other slice on top and transfer to a hot buttered pan. Grill till the cheese has melted then remove from heat and let sit for a couple of minutes. Pure heaven!

Grilled cheese, so many ways to make em! I like adding oregano and basil and maybe some crushed red pepper, alternatively I can see going with sauteed &/or fried onions with either some sliced hot pepper or cayanne pepper sprinkled on. Another alternative would be using a smokey cheese blend with coriander, cumin and turmeric. Also, I like the french toast version mentioned earlier; I'd actually thought of doing that recently.

Maybe not a grillled cheese, but a well executed Monte Cristo sandwich is pure heaven. It has to be deep fried, restaurants that assemble a Monte Cristo and cook it on the griddle need to be punished by the mean chef on Hell's Kitchen.
