So someone asked for a picture from my weekend, and this is the only appropriate one to share, lol. I played around with summer veggies and this is what I came up with -- Summer Goulash. Next time I will leave out the rotini, by the time the beans are done the texture with the noodles are ick. It doesn't ruin the soup though. One bowl and you're full! I think this will last us awhile, lol. So, it's bean soup with diced tomatoes, squash and bell pepper. Next time I'll add eggplant.

I've never had goulash before, but looking at this i think I'd give it a go.

Living with a Yankee for 22 years I tend to forget about bread *sigh* will have to find a recipe for cornbread.... and a good cast iron skillet. Went to a heritage event once and someone made cornbread in a cast iron skillet over a camp fire -- OMG it was FANTASTIC!!!

For fried cornbread just a simple mix of plain medium ground cornmeal mixed with a little salt and water fried in either vegetable oil or pork fat. Make the batter thin and when you spoon it into the frying pan it will become, what we call in the South, lacy cornbread. Crispy edges and delicious. BTW frying it in pork fat such as bacon drippings or lard will provide tons of flavor. Oh, fry over medium to medium high heat. Quick, easy delicious. AJ

Just remember that the boiling water "cooks" the cornmeal. If you don't get hot enough water it will be grainy.

This Summer Goulash looks great!
My recollection of Goulash, it was ladled onto noodles which were cooked seperate. That might help with the soggy pasta/noodle problem.

thanks! i think hubby prefers we skip noodles all together and just add more veggies. i forgot to mention there is cubed ham in it too. we might try the noodles separate, though.

My wife always cooks noddles separately.She says cooking noodles in the Goulash gives it a starchy taste.I don't know how to cook.All I do is eat and wash dishes.

Cooking was always a passion of mine, the pasta/noodle is always cooked separately ....al dente.....means โ to the tooth โ, on the firm side. Served on a plate and topped with sauce/gravy or even goulash. But some cooks serve the noodles mixed in the goulash. I make one of the best tender beef stroganoff dishes Iโve ever tasted. The secret besides good thick sour cream, fresh dill....not the dry jar ๐ฉ crap ๐ฉ.

Looks great! I always make "American Goulash", or "Zoni" as my family calls it, with the noodles cooked separately, then mixed in before serving. Even reheated the noodles aren't falling apart.
