Eating well and enjoying delicious food doesn't have to involve advanced skills, split second timing, or complex processes. As a public service, I started this thread where we can share simple but delicious recipes with each other. In that spirit I offer my first contribution.
Split Pea Soup:
1. Combine ingredients in a pot.
2. Add liquid to cover the ingredients
3. Bring to a boil, then simmer.
4. Eat

2 LBS. GARBANZO BEANS SOAKED OVER NIGHT FOR NO MORE THAT 8-10 HRS. @ 8 QTS SALTED WATER 1 LB. CUBED HAM 2 LARGE ONIONS CHOPPED 1 HEAD GARLIC CHOPPED 2 GREEN PEPPERS DICED 2 LBS. CHOPPED POTATOES 4 CHORIZOS CHOPPED INTO ¼’S 1 TSPN TUMERIC SPICES 1-2 SMOKED NAM HOCKS @ 13 PCKTS. HAM BOUILLON 3 BAY LEAVES (MED. SIZED)

RUSSIAN PEASANT SOUP---SCHI (Pepesdad’s favorite soup) Ingredients: 2 lbs. chuck/boneless short ribs. 1 onion diced 3 stalks of celery including tops (medium green leaves and young pale yellow leaf, no stem) 1 medium size head of garlic minced 1 small head of cabbage (remove core completely to avoid strong taste) 2 carrots scrapped clean 1 can whole tomatoes Flour Salt and pepper (black coarse) Beef Bouillon @6 tspns. Mirepoix: Oregano Thyme Sage Rosemary Basil Finely chop leaves 4-5 small bay leaves Minced celery leaves Prep: Thoroughly wash celery stalks and cut 1, in thirds including the white bottom stalk. Cut the other 2 stalks into julienned strips (thin), line them up and dice them fine also. Cut the meat into small chunks no bigger than 3/4” X 3/4”. Put flour into bowl and lightly flour the meat chunks in preparation to be browned in an iron skillet. Grate 2 carrots and set aside. Blanche head of cabbage after you have quartered it. After blanching cut quarters into strips and dice into 1” X 1” pieces. Pour a quart of water into large 4-6 qts heavy bottom stock or soup pot, add beef bouillon and bring to boil. Add spices and celery chunks along with the white root from all the celery stalks (3). Put a little pure virgin olive oil in the cast iron skillet and sauté, lightly brown the garlic (minced) and the onion (diced) along with the celery (minced) and leaf…when done onion is translucent, put it all in the soup pot. Using a slotted spoon, pull the celery chunks that you used for flavor OUT and discard. Brown the meat chunks lightly to medium brown in the oil from the garlic, etc. When all browned put it in the soup pot. Add the cabbage to the soup pot. Add the spices, bay leaves, and a can of whole tomatoes that you have broken (the tomatoes) up so that it better mixes in the soup. Add the carrots, grated. Heat for about 60-90 minutes (boiling), then let cool and skim any fat off the top sacrificing a little of the ingredients, but getting the fat off. PUT SOUP INTO LARGE BOWL…. PUT A HEAPING TABLESPOON OF SOUR CREAM IN MIDDLE OF SOUP BOWL(after soup is in) EAT WITH BLACK PUMPERNICKEL BREAD AND SWEET BUTTER…ENJOY

A darn good Guacamole recipe......also I add either finely chopped green or black olives and even beans👍👍👍
Ingredients 3 Ripe avocados peeled and pit removed 1/2 Red onion finely chopped 1 Tablespoon cilantro chopped 1 Teaspoon garlic powder or fresh garlic minced Juice of one lime 1/2 Teaspoon salt 1 small tomato seeded and chopped 2-3 Tablespoons salsa verde 1/2 Teaspoon hot sauce 1 Jalapeno stems and seeds removed and chopped (optional)
Instructions Mash avocado slightly in a large bowl using a fork. Add lime juice, salt, hot sauce, and garlic powder and continue mashing to desired consistency. Stir in the onion, cilantro, tomato, salsa verde, hot sauce, and jalapeno. Taste and season as necessary. Serve immediately or cover bowl with plastic wrap and refrigerate.
If storing overnight add a few more drops of lime juice, or you’ll have a “ funky “ gray matter the next day. The acid from the lime juice helps quite adequately!!

Simplest and tastiest pasta in the world. I eat it at least once a week and it only takes 10 minutes total (well plus some time to boil water, but you can be doing anything else while that is happening). Spaghetti Aglio e Olio con Peperoncini - Set 1 lb of spaghetti to boil in salted water ("salato come il mare" like my mother would say "as salty as the ocean")
- slice 8 cloves of garlic paper thin
- heat 1/3 cup olive oil in small frying pan
- add some crushed red pepper
- add garlic and saute until soft and just turning golden on the edges. no more than 2 minutes!!!!!! Really it is just toss for a minute to get the flavor of garlic in the oil.
- remove from flame and add 1/2 cup of pasta cooking water to stop the cooking (dump it quick so it doesn't splatter)
- When pasta is cooked drain, toss with olive oil mixture
- top with grated cheese and black pepper (add fresh basil if you are feeling fancy)

Put piles of mashed potatos on a greased cookie sheet. Add a split kosher beef hotdog to the top of each pile. Put a slice of some sort of cheese on top of each. Bake at some temperature for some amount of time.

I make this recipe when it starts getting cool/cold outside. In fact, I made up a batch last night (as it tastes great after a night in the frig to marry things together). I'm on my second bowl as I'm sitting here, typing up this post. The recipe is Kale and Spicy Sausage Soup... KALE AND SPICY SAUSAGE SOUP
2 – 32oz boxes of Chicken Stock or Broth. ½ Onion – I used a large yellow variety for this. 5 Carrots - medium to large size. 4 Celery stocks – medium to large size. Kale – one nice size handful of Kale. 1 lb Italian Sausage 2 tbsp Italian seasoning – that’s 2 “healthy” tbsps folk! 1 tbsp Salt Pepper to taste – I shook the pepper shaker for about 5 seconds. I used a 1 gallon stock pot for this recipe. Pour your chicken stock/broth in the pot and set the flame on low and cover. Cut, chop, and dice the required onion, carrots, and celery and place them directly into the pot. Place your one handful of Kale into the pot. I purchased a bag of cut Kale from the store, and placed an amount which blended and gave a good balance between the stock and other ingredients. Add the Italian seasoning, salt, and pepper to the pot, stir, and turn the flame up to high. You can perform a taste test at this point for Italian seasoning, salt, or pepper additions to your taste. As your soup just starts to indicate a boil, turn the flame down to low/simmer, cover. Grab your favorite skillet, heat it up, and place your Italian sausage in and brown it up real good. Chop it up as your turning the sausage to brown. When done, place the sausage and fat rendering into the pot and stir to mix all the contents, cover, continuing the low/simmer setting of your flame. Set your timer for 30 minutes and stir the contents from time to time. This soup rocks! It tasted good, of course, upon completion, but even better after it sits overnight in the refrigerator. Juicy Lucy
1lb ground beef I use 80/20 chuck
4 slices of your favorite cheese
Salt and pepper
Divide meat into forths then divide again equally
Make thin patties, you should have 8
place cheese onto a patty and cover with another patty
seal edges well really really well
salt and pepper to taste and fry. I like a lil bit of bark on my burger
We serve them between 2 slices wonder bread with just ketchup but you are free to do what ever you wanna

Put everything in a huge pot, let cook, eat for a week. He was a simple man. That is a regular for me. I substitute cabbage for the spuds, although sometimes the taters creep in on their own or I add homemade dumplings. Guinness Stout is often substituted for water. I gather Grandpa roasted them dry. That works, too and the Guinness can be saved to wash it all down.

This is all looking good...let's see some more...I know you folks eat..let's do it. Here is another favorite for REAL key lime pie...like they make in Key West. KEY LIME PIE
1 Graham cracker crust, blind baked with egg white wash, sprinkled with cinnamon, baked for 4-5 minutes, let cool!! 4 EGG YOLKS BEATEN WITH 1 TSPN. VANILLA 1 SMALL CAN CONDENSED, SWEETENED MILK (MINOT OR EAGLE) 6 OZ. “NELLIE AND JOE’S” KEY LIME JUICE Beat together and let sit for a few minutes Pour mix into pie crust and bake at 325-350 for about 25-30 minutes until pie filling is firmish. Let cool completely, at least 1 hour. Top with real whipped cream and refrigerate for 2-3 hours before serving.

1 9” PIE CRUST “DEEP DISH” 2 3 4 EGGS SEPARATED, USE YOLKS ONLY, RESERVE 1 EGG WHITE 4 5 1 SMALL CAN OF SWEETENED CONDENSED MILK (EAGLE BRAND OR MINOT) 6 7 POWDERED CINNAMON 8 9 5-6 OZ. OF COCO LOPEZ “CREAM OF COCONUT” (NOT COCONUT MILK) [COMES IN 15 OZ. CAN IN “ETHNIC FOODS”] 10 11 1 TSP. PURE VANILLA LIQUID 12 13 ¼ CUP OF “BAKERS” GRATED COCONUT FLAKES BLIND BAKE PIE CRUST BY: SLIGHTLY BEAT EGG WHITE, BRUSH ON PIE CRUST AFTER PRICKING BOTTOM OF CRUST TO AVOID “BALLONING” WHILE BAKING AND DUST WITH CINNAMON POWDER. BAKE AT 375 DEGREES FOR 7-8 MINUTES UNTIL CINNAMON STARTS TO BROWN (YOU’LL START TO SMELL THE CINNAMON). LET COOL FOR 15 MINUTES ON COOLING RACK BEAT EGGS WITH VANILLA, ADD CAN OF SWEETENED CONDENSED MILK, BEAT THOROUGHLY. ADD COCONUT CREAM SLOWLY TO MIX AND TASTE AFTER 5 OZ., ADD MORE TO TASTE, BUT DON’T GO PAST 6 OZ. (WILL GET TOO DENSE). BLEND WELL. POUR MIX INTO COOLED PIE CRUST TO WITHIN ¼ INCH OF TOP. DUST TOP WITH COCONUT FLAKES. CAREFULLY PLACE IN 375 DEGREE OVEN (CENTER) AND BAKE UNTIL GOLDEN TOP AND PIE IS “SET”. APPROXIMATELY 35-45 MINUTES. LET COOL ON PIE RACK UNTIL BOTTOM IS COMPLETELY NOT WARM. REFRIGERATE!!!!

Spaghetti Squash:
1. Pre-heat the oven to 375˚ 2. Cut a spaghetti squash in half lengthwise. 3. Scoop out the seeds and stringy guts 4. Place the two halves in a Pyrex baking dish. 5. Stick the baking dish in the oven. 6. Forget about it for approximately 80 - 90 minutes 7. Check to see if done, and if done, remove from oven and turn off oven. 8. Let rest for 10 minutes 9. Scoop out the strands into a casserole dish that has a cover. 10. Dump whatever you want on the spaghetti squash. 11. Eat

Set oven to 500f, if you live where it isn’t Fahrenheit you’ll need to do the math. Wipe turkey inside and out until dry, rub the outside of cavity with unsalted butter then use your own amount of salt to taste based on past experience, fresh cracked pepper if desired and a few bay leaves under the skin and body. Rub the inside of the cavity with salted butter then fill the cavity with unpopped popcorn and sew cavity closed. Face the butt end of the turkey towards the back of the oven then close. No need to set a timer since the turkey will let you know it’s finished as the pressure from all the popcorn will propel it through the stove door against the wall on the other side, if you are good at calculating trajectory you can place a platter to prevent it from hitting the floor, the popcorn is for the football game so you’ll need to decide what vegetables to go with it. Buttermilk Corn Bread......with cream corn....YUM!!!
INGREDIENTS
1 1/2 cups yellow cornmeal 1 1/2 cups all purpose flour 2 1/2 teaspoons baking powder 3/4 teaspoon salt 1/2 teaspoon baking soda 1/2 cup buttermilk 1/2 cup vegetable oil 1/3 cup sugar 2 large eggs 1 can cream corn
PREPARATION
Preheat oven to 400°F. butter or shortening on bottom and sides of a 9x9x2-inch baking pan. Mix first 5 ingredients well in a medium bowl. Whisk or use a large fork and mix in buttermilk, oil, sugar, cream corn and eggs in large bowl to blend. Add dry ingredients, stirring just until blended. DO NOT OVER WORK THE BATTER!!! Transfer batter to prepared pan. Bake until tester inserted into center comes out clean, about 25 to 30 minutes. Cool in pan on rack.
Even tastes better the next day if toasted in a countertop toaster/oven. Then “ slather “ with soft butter or my favorite Brummell & Brown...Made with real yogurt 👍👍👍👍👍
