Thanksgiving...... Brined for 48 hours. Stuffed. Slow cooked in oven.
The rest of the year...... Brined for 24 hours. Hickory smoked.

This year it will most likely be a frozen turkey dinner for me. Seems my two children have plans elsewhere!!! I often wonder what I’m doing here in NC, other than when needed.
PS I was just informed by my ex from ‘75 that I’ve been helping with her disabilities that Arby’s now has a special turkey sandwich that’s fried, hand carved and served on bread or a roll. So, the day before Thanksgiving I’ll be picking two up....perfect 👍👍

Roasted on the grill lightly smoked with southwestern stuffing... (cornbread, chayote squash, Jalapeños, pecans, cilantro)

Fried turkey is good.
They can be enjoyable if simple preacautions are taken so the evening does not become a visit to the ER and the Burn Unit after the Fire Department extinguishes the blaze. LOL!
We will be roasting in the overn. Breast side down on a bed of mirepox. The last hour or two, invert the bird to brown the breasts.

I put the bird in the oven traditionally. The stuffing however is kind of special. I use pork fried rice from the chinese restaurant. I have met others who do this, but not many.

Had fried once and it was kind of lacking in flavour. I'd like to try smoking one, but if I end up cooking, I will probably go with the standard oven. The trick is to forgo basting. Simply stuff the beast and rub it down with seasoning before wrapping it well in foil. When it reaches temp, take out of the oven and let it rest for an hour prior to carving so all your hard work doesn't escape as steam. I think my friends may have to cancel, so... I may just be stopping at McDonald's on my way to the bar.

Interesting, but I could never go without my traditional stuffing. Maybe I will try your idea out some night with a Cornish hen or capon.

Not a big turkey fan here,but I do like to pan fry turkey breast steaks in tikka spice and serve with a korma sauce and rice

We will do the traditional baked turkey with stuffing, cranberries, sweet potatoes, and all the trimmings. I love Thanksgiving. Hope we'll survive the in-laws family squabbles that always seem to occur. Hope you all have a Happy Thanksgiving!

We can still celebrate it individually, and we do in some way. I was more thinking of having the time off work where family and friends are also off and can come round to celebrate together because it's a public holiday.

We have cooked turkey by every usual method and I prefer the deep fried bird. The trick is injecting a good seasoning just before frying, the breast comes out crazy juicy and carries the injection flavor with it.

My Son in his first career as a Chef taught his Mother how to debone a turkey, this year deboned turkey with a spicy pork stuffing cooked breast down smothering in the juices.

Cut the top off a big plastic coke bottle fill with flavorful woodchips and water. Season bird with this and adjust for poundage www.epicurious.com/recipes/member/views/prudhomme-chicken-50011542 Fire up smoker with a water pan and get the heat up to 250 keep adding more charcoal and wood chips as needed. When bird has a great looking suntan remove from smoker and serve.

because my mother was a pain in the @#$$ three years ago, we now have Thanksgiving dinner at Shoney's first thing in the morning (11am) and then we come home to crockpots of chili to eat on the rest of the day. I will probably also buy a pumpkin pie for evening dessert.
however, we are picking up two homegrown organic turkeys this coming weekend and hubby is researching how to smoke them....

My Son in his first career as a Chef taught his Mother how to debone a turkey, this year deboned turkey with a spicy pork stuffing cooked breast down smothering in the juices. I never deboned a Turkey, the bones add flavor to slow roasted meat, but I have butterflied them to roast on a bed of mirepox. The bird cooks more evenly and a bit faster. Learned that in school and that is the way we did it in my restaurant. We were able to get two birds in each of the ovens.

My Mom has always been great at roasting a turkey, look forward to it every year. Might be getting oyster stuffing if we can find good oysters this year!
