Been at it for 3-4 months now and I love it.
I've picked up 7 or 8 different tobaccos from my local B&M plus a few online.
Right now, they all seem to be very similar. Sure, there are very subtle differences but I don't think I'm mature enough yet (or will I ever be?) to appreciate those subtle difference and will my palette develop?
I can pack a bowl of anything I have right now and enjoy them all pretty much the same
Except....
Seattle Pipe Club's Plum Pudding. Now this is a baccy I can really taste and enjoy the difference. I love it!
Is it normal to have 1 stand-out tobacco with all others sort of blending together (pun intended) or do you folks have multiple stand-outs?

Depends on what "others" you have. If you went to the local B&M and they gave you the general aromatic selection then yes, they are all similar. Probably a Vanilla/Caramel undertone.
I would say that plum pudding is a crossover, an aromatic with a English lean. Others with a more robust palate will chime in with some good specific blends to try.
Grab a few different "families". Straight VA, Vaper, English, etc.

Down your journey of trying many different blends you’ll definitely pick up a few that really “ tingle your taste buds “👍
So, you really enjoy SPC Plum Pudding. Now I suggest you try SPC Plum Pudding Special Reserve.....hold onto your socks!!! You’ll end up purchasing a few tins. You have a long road ahead, enjoy your travels.

It takes a while to sort it all out, not that you ever get it quite sorted. I’ve been back at the pipe for nearly a year after a 30+ year hiatus and the selections of blends is overwhelming. As peteguy said, try a representative tobacco from each of the “families”. Do some digging around here to read up on that approach. Take it slow and use some caution, or you’ll end up with 50+ open jars/tins; ask me how I know! Most of all, smoke what you like and enjoy the journey! Try the different varieties that you like.... There are: Aromatics English blends Virginia's Burleys And many combinations of the above...for instance, with Virginia's: There are Virginia English combo's Virginia/ Burley Virginia/ Perique And then there are many different cuts: ready rubbed Flake plug shag Ribbon Etc.... I suggest looking towards buying 2 oz. increments, and start seeing what you like, and what agrees with you and then start socking them blends away. Welcome to the forum. I have the same issue as you, but I've found over time that I've started to be able to distinguish between different blends. They're are differences but you'll notice them with experience.

I’ve only been smoking pipes for about two years and I’m just now starting to really get some nice distinctions between the different leaf. I still try and order a variety each time. Always exploring!

I, too, am fairly young in the art of pipe smoking (it's nice to be young at something). I think peteguy hit the nail on the head in that a lot of B&M's sell aromatics only and they do taste similar. I am slowly weening myself off aromatics and experiencing more "tobacco" but as these fine people will tell you "smoke what you like and love what you smoke".

I'm fairly new to pipe smoking starting up in October but I pretty much decide what to smoke and cellar by what other members here are smoking. Some at first I didn't get the love for them so I set them back and tried again later and enjoyed them. Others were love at first smoke. I'll pretty much smoke any of the family's of blends at any given time and haven't found many I don't enjoy. As others have said smoke what you enjoy. Experiment with other blends to see if you like them if you don't set it aside and try it later on down the road. You just might like it.

If you can already discern that SPC Plum Pudding is something special, then you'll be just fine. Most pipe smokers, including myself, hold PP in high regard. Also try SPC Mississippi River Special Reserve.
Just to reiterate two important points; What you might not like today, you may well enjoy down the line. Most tobacco gets better with age so just jar, cellar & forget.
There's no such thing as too much tobacco. Laws are changing thanks to the self appointed shrieking arbiters of social conscience. (Laws here in Oz suck balls big time. 50g of tobacco is now $85-$90) Buy blends that you like in bulk. Keep an eye out for specials on tinned blends.
