I just read that more than half of the sweet potatoes grown in this country are grown here in N.Carolina..I guess they have a part in replacing tobacco in Carolina crops.

That's an impressive number of sweet potatoes. They are becoming a big thing over here with health aficionados. I'm not sure if deep fried sweet potatoes are really THAT much healthier than deep fried regular potatoes.

For some thats a difference that helps but for others it doesnt matter. I try and stay away but love me a good potato fried, baked hash browned and more. These day's they're a special treat. Oh to be young with a high metabolism. :/

I really enjoy a good sweet potato, actually healthy food!! Even though they are grown locally the price is high. Then again all produce is fairly expensive in NC.

Best sweet potato down here in Cajun Land is the Porto Rican, lots of sugar, damn good with a hot bowl of gumbo. One of my mentors at Exxon told me this story, as a young man in winter they would on sulky rides put a hot sweet potato in each pocket for warmth. One really cold morning, they hitched up the sulky, you were right up in the horses business in that particular sulky. The horse had been in the peanut field eating green peanuts, getting ready my mentor said he flipped the reins and said Gittup, the horse proceeded to blow a big green one in their face. He said it made him so mad he grabbed a hot potato out his pocket, threw it at the horses butt, the horses tail clamped on the hot sweet potato and tore off like a rocket, ran thru the gate flat out for a couple miles. He finally stopped trembling looking back to see if anymore hot sweet potatoes were coming his way.!

Growing my friend AG Black born on the same day 60 years apart used to say a sweet potato is a perfect food it needs nothing. Sometimes I eat them that way and think of AG other times I add butter.

There's a BBQ place we go to when visiting one of our sons on the other side of the state. They make nachos using sweet potato fries covered with pulled-pork, cheese and bbq sauce.
That and a cold beer will make a man happy.

I love them anyway I can get them except as French fries. My mom used to slice them 3/8s inch thick and fry them in bacon grease in the cast iron skillet until they formed a skin and puffed up. Inhaled them with butter.

I had them one time with a side of butter that had been whipped with cinnamon, sugar, habanero, and honey. Not really a sweets kind of guy, but they were excellent.
Usually they aren't prepared correctly, so I rarely take a chance on getting them. The Dude can't abide soggy fries. haha Unless I get them crispy and I make them that way with a gallon of vinegar. (regular fries that is. I wouldn't wanna try vinegar on sweet potato fries)

Balsamic vinegar works pretty good no so good with malt vinegar. Now regular fries and malt vinegar that's some good stuff.
