Dinner last night was just a couple of baked sweet potatoes and corn on the cob. I was happy. Sounds delicious!!

A big plate of sweet taters with butter salt and pepper along side of a nice pork chop. Or even just a plate of sweet rater fries with a mix of cracked green, red ,white and black pepper. With a cup of Hot sauce on the side.
Then to top it all off a big slice of fresh sweet tater pie.
And if you want to finish off the night find yourself a slice of buttermilk pie with a fresh cup of mud.

I've loved baked sweet potatoes with butter since I was a little kid and sweet potato pie is wonderful!

My Nigerian friends are big on sweet potatoes with ripe plantains. The two are beaten together into a mash..
Might have to try it when I locate plantains.

Am I the only one that eats the baked potato skin? Nope. I eat them, skins and all too - potatoes and sweet potatoes. Mashed potatoes are better when you leave the skins on as well and sweet potato fries are great.

Mashed potatoes are better when you leave the skins on as well and sweet potato fries are great. Me, too. I scrub the skins of all potatoes and cook them intact. Even my mash has the skins on, the russet mash anyway. .

I just had roasted sweet potatoes, peppers and onion with some paprika mixed in before cooking. In the oven at 180 centigrade for 30 mins. Taken out and cheese grated on top of the whole lot and put back in for another 5 mins (just to melt the cheese).
It was the best sweet potato that I have had.

There's a street vendor that comes by my street every night selling yams and plantains. I tend to put sweetened condensed milk and cinnamon on them but it never occurred to me to eat them together.

I will try that. Plantains are available in the Town of Toad because we have Mexican and Guatemalan migrants living there. Without them it would be plain cooking, Bub!
