I experienced this on Sunday. Tried three different tobaccos and not even my go to Yorktown hit the spot.
(I haven’t completely discounted the notion it was because I was watching the Bears shite the bed.)

Yup. If my schnozz is off, nothing is right. Allergies, or dry sinuses, even if there's a stronger scent (potpourri, candles). That all throws off my smokes.

Rarely...but I don't get sick all that often...I try to stay away from people as much as possible...just the wife and the small doggie.

Any pipe is better than no pipe!
I will have days where sometimes a certain blend will not taste as good. Awhile ago I came home one evening and loaded a bowl of Capstan. It tasted like crap. I tossed the bowl and put in some English blend and all was right with the world once again. Smoked the Capstan later that week and it was great.
I think there are a lot of factors that can influence it. The pipe itself, the weather, my mood, the ph balance of my mouth, what's going on around me, stress. So many variables that can take a tobacco from tasting bad to tasting great.
I think it's less about the tobacco and more about me.

Usually when I'm sick but I always manage to find something that tastes less crappy than others

Yes, I do. If you smoke too much, it can desensitize your taste buds. Strep, thrush, etc., can also effect you sense of taste.

Not just you, everyone goes through this. Ah, ah, ah....... Jiminks never has the problem, but then we are talking about normal smokers. Jim had a problem that also afflicts me. If you take a Lunesta to sleep, then the next day everything tastes like "bottom of cat box".

Hydrate, hydrate, hydrate
The biggest factor on flavor for me is what else I've had to eat or drink that day. A day full of water (I drink a lot of it) gives me good smokes. Sweet drinks tend to dull down my taste buds. Coffee is also a staple for me and some lighter blends are muted because of it. Sinus issues really screw things up for me as well. Good thing I live in South Georgia where pine trees dump pollen clouds a few months out of the year.
