It's Sunday evening and the conversation here seems just a bit slow.I throw this in for no particular reason..Yesterday in Michigan 300,000 chickens were killed in a barn fire on an egg farm..I didn't know you could get that many chickens in a barn.

That is sad. A terrible waste.
I am sure the farmer/rancher is devastated by this loss.

Most of the eggs at the stores come from chickens that are jammed into small spaces. When I was a kid, I visited one of these sites and will never forget how sad it was. We try to find local sources for our eggs most of the time.

That's why I always buy free range organic chickens. Animals that are grown for food have a short and narrow life anyway. What time they do spend here should at least offer them some bit of comfort and they should not be treated with horrendous predatory practices. Regarding the barn, I'll say no more. You can guess my feeling on that.

Animals should be treated with respect, saw as a very young boy my big German Grandfather slap a man off his horse he was mistreating. Wife buys local eggs at a farmers market, our Gumbos turned to 💩 useing chickens grown today. Bought a local chicken and man the gumbo tasted like heaven, I thought it was old Mans taste buds going bad, but a lot of people have chimed in with the same observation.

Years ago a chemical truck turned over hauling a additive for the big T chicken feed. They shut down the freeway down for one mile on each side of the wreck. I eat Pilgrims Pride at least it does not make me sick. I also wash my eggs before I crack them these days.

I was hoping this thread was about Fried Chicken.
There is nothing finer.
I have never been able to reproduce the Fried Chicken I have had elsewhere. I knew an African American lady from Dee-Troit, Miss Edith, back in the 1960s. Her Fried Chicken was what it is about. I have had KFC from a rural KFC store in North Carolina staffed with old ladies that was unbelievable. I must ate the whole Bucket. I had Fried Chicken in Bernie, Texas which was divine.
The wrongful death of chickens is a source of sadness.

The chickens from the back yard, killed by my grandmother and fried in cast iron by my mom was the best thing ever. Second best was the old Windswept Inn on Airline Dr. Back when that part of town was part of Texas. Amazing food, but they went away 40 years ago. Pan fried chicken beats deep fried every time. The more you get to know chickens, the less you care.

The more you get to know chickens, the less you care. I agree that pan frying beats deep fat frying for flavor. Deep fat frying is quicker cooking, of course, so that serves a retailer well.

Pan frying let’s the moisture escape, giving you crisper chicken, deep frying encapsulates and chicken is not as crispy, or tastier, I’ve got Grandmaws cast iron skill, wife’s uses it. Fries eggplant, and cauliflower my favorite, oh forgot green tomatoes fried are the best., tart.

Fried green tomatoes with cast iron biscuits topped with sausage cream gravy. Absolute heaven and you cant make a stove top biscuits without cast iron. Trust me I am fatter than you.
