July 4 is a holiday often enjoyed with cooking something special. Grills, both charcoal and gas, are combusted all across America. ALl kinds of special foods are prepared. The worst July 4th I spent was in a hotel in the north of England. For some reason, no gave a poop. Just me.
So, what are you doing? Let's us review your plan of assault.
Me? My ex-wife, with whom I spend most holidays, wants to prepare Paella. A mixed Paella with shellfish, chicken and sausage.
I have been studying recopies and it seems similar to Gumbo but without the roux, saffron instead of File. Yes, I have a Paella Pan, never used but this will be the first time.
Y tu, Brute?

I have a 15 pound Certified Angus Beef Brisket sitting in the fridge at home... The wife says “why don’t you cut it in half and freeze some, it will be bad by the time you get home. (Insert Charlie Brown sigh)
The meat is in Cryovac, cutting a brisket is sacrilegious. I love the gal, but we have had this conversation many times.
I will smoke it on the 3rd, and have the family over on the 4th. I have had too many instances where we invite the family over, and the meat hits a stall on getting done, and we eat at O’ dark thirty.

I know what you mean. I always smoke our turkey on Thanksgiving. Sometimes it takes two hours - sometimes four.

nothing special planned, might uncover the CharBroil outdoor grill for 1st time & do some plain large chicken pieces. Closest combined family folks about 50miles away. No get together, the g.friend is a triage nurse & very busy.

Not that many mouths to feed. I am going to start on the Friday before as well to give the beef ample time to soften up. My rig is a 26" inch Weber with an XL slow and sear. I can get an 8 hour cook with the slow and sear. Not many better ways to spend a weekend than watching smoke. EDIT: Is it Y tu Brute or Et tu Brute?

OK, I'm a Yankee and have never heard the term rice dressing. I am reading that Rice Dressing is meat(s) + rice? Is that right? How do you make yours?

Fireworks are nixed here for this year- bone dry.
I think the mountain villages of Eagles Nest and Angel Fire are shooting fireworks out over their respective lakes. Hope it works out for them.

Haven't thought much about it until I saw this post. We'll at least do hamburgers, hot dogs, sausages on the grill. Maybe I'll smoke some ribs.

Wife makes a roux, medium dark, adds ground meat, cooks it down, then adds rice with a little water so it’s soupy at first but rice absorbs , it, takes many years to know how much liquid to add, my wife is an expert., then there are seasonings, we like it spicy, but not too hot.

Sounds yummy. I always like dirty rice as well.
Worked in HS on the push boats between New Algiers and Pensacola for Compass Marine. We used to trade diesel fuel for fish with the fishing boats. Man we had some epic feasts.

4th July is just another day for me. My wife's birthday is the 5th July though, so I'll be doing steak with pepper sauce and dauphinois potatoes for dinner. She's vegetarians so she won't have the steak. I'm looking forward to it though.

I have a couple of large chunks of goat that I was supposed to cook with a friend who is a professional chef. When the virus hit we had to call off those plans, so I'm thinking I will take it on myself. No idea what I'm doing, but it's meat and I have a grill, so we'll be good.

One of my favorite balladeers, Tom knew how to bring a story to music. Saw him in concert once. A very small venue. He was great. He told the audience that there was an after concert party at the Holiday Inn, that we were all invited to. All we had to do was get past security.

Used to get a big striped watermelon real cold with a round hole cut in it with a opened bottle of vodka pushed in the hole. Man that was a good watermelon.

An old preacher friend of mine used to tell stories about when he was a kid they somehow put in a line in the stem with a tube in a bottle of liquor or vanilla extract and the watermelon would suck it in as it grew. I was a little young to understand the process.
