Sunday morning I pulled up a whole row of beets ,from my garden. We spent the better part of yesterday morning canning the little rascals,and as I was tightening the lids on the last few jars I asked the wife what happens to all the beet juice from the cooking pot... "Just throw it out" was all she had to say...Now, if you know anything about the health benefits of organic beets and beet juice, you know that just doesn't make since, so I poured the juice into two quart jars and stuck them in the fridge. Last night, at bedtime, I drank an eight oz. glass , with a dash of black pepper, and this morning my fasting blood sugar number was fifteen points below the usual; I know many other things factor in to good blood sugar levels , but I still think the beet juice was a smart save ... plus the cost of a jar of beet juice is six bucks or more...so it's a win/win !!!

One of the favorite things in my garden. Can cut the tops over and over and eat (I love them cooked down in eggs) and then when you are done with the tops can eat the root itself. I prefer the red ones, but there are golden varieties that are a nice change of pace sometimes.

Marinade them in corned beef seasoning then toss in boiling water until slightly soft. Finish on the grill and put in a mini burger bun. Beet sliders!

One of the favorite things in my garden. Can cut the tops over and over and eat (I love them cooked down in eggs) and then when you are done with the tops can eat the root itself. I prefer the red ones, but there are golden varieties that are a nice change of pace sometimes. The Golden Beets are also good. Especially for Beet-phobes, less of that "Beety" flavor.

Sorry, that was supposed to be the other way around. Toss in boiling water to soften then slice and put the corned beef spices on it. Let sit and finish on the grill.

Just baked in the oven with other roots and brussel sprouts is good. Just do not forget you had them or you might think your dieing later on.

The Republic of Ireland does. We have Lidl though. If it's in Aldi i'm sure it's in Lidl. I'm sure it's in Tesco too; I've just never looked for it before.
